Welcome to my 7 minute garlic and coconut zoodles recipe.
I don’t know about you but I love coconut oil, zoodles and garlic. They are three really big loves of mine.
I love coconut oil not just because it is good for me, or because each time I cook with it feels like my hands are 10 years younger but because it tastes amazing. Just like with butter if you add coconut oil to your food it really does give it the most amazing wow factor.
I love zoodles because it is amazing how they can make vegetables so interesting. They can be created in a matter of seconds and due to the size they then cook incredibly quickly. My old school reports said that in cookery classes I was super slow and talked way too much. Well this is all true and with a spiralizer it saves me a lot of my chopping and I have zoodles in my pan quickly so that I can get on with the cooking side of things.
Finally, I have a huge addiction to garlic. It is a true love and if garlic is in my meal then I am happy. Well I live on the Mediterranean so it is a staple of the local diet, so I am sure I am not alone. Though Dominic (every now and again) complains I have added too much garlic to his dinner. Though if you do love garlic like me I am sure you will love this dish. If you are not too keen then reduce the garlic quantity!

- Peel your carrots and sweet potato.
- Spiralize your carrots, courgette and sweet potato and place them in your wok.
- Add the garlic and the coconut products and mix well.
- Cook on a medium heat for 5 minutes and it will be done when your courgette has reduced in size and your vegetables have gone lovely and soft.
- Add the seasoning and mix well.
If you wish you could use lots of other vegetables that can be spiralized. I also love to use swede, turnip and butternut squash.

If you want to eat healthy and reduce your carbs then this is an excellent modern way to reduce the amount of carbs that you are eating and instead eat a lot more vegetables. Our favourite way of using our spiralizer is to make courgette noodles, just because it’s the easiest! You can then throw them in the wok and cook up a delicious meal.
I am really slow in the kitchen (well so the hubby tells me) and I can zoodle a courgette in under 60 seconds, so they really do fall under convinence cooking for the healthy family.
With this particular zoodles maker we found that it came well packaged and was easy to put together and then when we were done with it, was super easy to clean. It is now stacked away in our cupboard for when we next plan on having a zoodles feast.
