Air Fryer Mediterranean Vegetables is one of the BEST EVER things to cook in the air fryer, compared to traditional oven roasting methods.
Let’s start with the cooking time as this is unbelievable. In fact, until you cook our air fryer Mediterranean Vegetables Medley, you would have thought that it was too good to be true.
That is because classic Mediterranean summer vegetables baked in the oven would take approximately 30 minutes. The frozen vegetables we bought had a recommendation for 35 minutes in the oven. Cook them in the air fryer from frozen and you’re talking JUST 8 minutes. That’s nearly 75% quicker.
As well as this, cook Mediterranean vegetables in the air fryer and you need LITTLE olive oil. When we cook vegetables the air fryer way, we find that we rarely use over a tablespoon and that’s for a big tray of vegetables!
Air Fryer Mediterranean Vegetables From Frozen
I know that many of my readers don’t have the luxury of these amazing Mediterranean vegetables being available to them all year round. My uncle used to complain to me about this as he lived in Vermont and with cold weather, the price would be out of control if you wanted them fresh.
I am also a frugal person, or as Dominic calls me “tight arse” and feel like I am being ripped off by the supermarket, if they dare to charge me out of season prices.
I will not buy courgettes, peppers or tomatoes unless they are on a special rate. BUT I am sure our full rate (given our location is cheaper than most countries).
That is why I recommend you buy, blanch and freeze or buy it already frozen (like we have) to save money.
Then if you want to enjoy a medley of Mediterranean vegetables out of season, then you can grab them from the freezer and cook them in the air fryer. How To Cook Mediterranean Vegetables In The Air Fryer?
To cook your Mediterranean vegetables in the air fryer is EASY.
If you want your vegetables to be like either grilled vegetables or oven roasted, then I recommend you use an air fryer grill pan. Your vegetables sit on your air fryer grill pan and give a much better flavour and get that grilled look. It also means that any excess olive oil goes to the bottom of the air fryer and keeps your vegetables even lower in the calories department.

Once you have tossed your frozen Mediterranean vegetables in olive oil and placed them in the air fryer grill pan, its time to cook them. For the best results I have found that starting off on a higher temperature and then cooking at a lower temperature, allows them to be thoroughly cooked and not to be burnt.
Air Fryer Roasted Mediterranean Vegetables
- 450 g Medley Mediterranean Vegetables
- Remove all freezer packaging and place the vegetables onto the air fryer grill pan. Transfer the grill pan to the air fryer.
- Cook for 3 minutes at 200c/400f, followed by a further 5 minutes at 160c/320f.
