Welcome to my latest recipe in the Airfryer and today we are talking about one of those dishes that we should all try out. We’re talking about bread stuffed with turkey, spinach and cheese that shouts out comfort food for the perfect family supper.
Serve this with your turkey leftovers with some spare ribs or with some chicken wings and you have the perfect supper.
We actually made this in our Airfryer because it is one of those quick meals that is perfect for putting in and forgetting about it. The bread is also made from scratch and is a lot easier to prepare than you would think!
This recipe is actually inspired by frugality.
I would never consider myself to be poor but I would never consider myself to be rich. I have earned enough money over the years to be able to have 2 holidays a year, yet I have been on the other side of the scale when I have to watch what I spend at the supermarket. But I have always had the money to be able to put food on the table and pay the mortgage.
But I do recall my Grandma telling me (my Grandparents were very poor) that she would skip lunch to feed her 3 youngest daughters. She would be down to just 3 eggs and would do scrambled eggs for them, knowing that the eggs could then be stretched to feed 3. I just couldn’t imagine being that poor that you couldn’t stretch to an egg each for your kids.
But that was a different era and money and benefits in the 1950’s is completely different to the era we live in today.
But for me this meal shouts out this era. You are using a very small amount of turkey (more flavour rather than substance) and making bread from scratch like they did in the old days. It means that this meal can feel like it is meant for a king or queen yet it was cooked for the income of a servant.
Plus just like Toad In The Hole it is perfect for a frugal meal that tastes amazing.
Though I could never imagine my Grandma with an air fryer, I am sure it would terrify the life out of her!

Rub the butter into the plain flour until it resembles breadcrumbs. Mix in the yeast and the turkey followed by the warm milk. Mix in the salt and pepper. Mix well until your mixture makes a nice dough. Knead the dough for about 10 minutes. Roll the dough on a clean but floury worktop.
In a mixing bowl mix together the spinach with the soft cheese and layer the top of the bread with it. Cover with the cheddar cheese and roll up the bread so that the cheese and spinach forms as the centre of the bread.
Place the bread in the air fryer on top of the baking mat. Cook for 180c for 20 minutes followed by 8 minutes at 160c so that it can be fully cooked in the centre.
Serve with a delicious sweet chilli dip.
You can also add chunks of potato, onion and other vegetables to the middle of the bread. But we just love the taste of cheese and spinach.

Though for the recipe above we have used the flavour of the turkey wings to make the dish to just prove how far you can stretch a turkey!
