Easy Zucchini Meatballs

In this air fryer zucchini meatballs recipe, you can enjoy the delicious flavour of mini zucchini fritters with an amazing crunchy texture but at the same time, be completely flourless.

I love these zucchini meatballs. I mean I REALLY LOVE these zucchini meatballs. They have a lovely crunchy flavour thanks to the fine gluten free oats, are loaded with lots of cheese and the zucchini gives them a lovely flavour.

I have always eaten zucchini fritters with the plain flour but it is really not that healthy and I always find that is gives me a big bloated feeling afterwards.

I have suffered with IBS a lot over the last few years as well as a gluten free intolerance and prefer to make zucchini meatballs instead.

Even better, if you cook zucchini meatballs like this it is like eating popcorn chicken meatballs from KFC with that lovely crunchy texture.

When you first try my easy zucchini meatballs in the air fryer, you will automatically think they are unhealthy when they are not.

I recommend that you dig in and make a batch of my Air Fryer Zucchini Meatballs. They are perfect for party food, a quick snack, to go with lunch or dinner, or for picnic food for the beach.

Healthy Zucchini Meatballs

Our Air Fryer Zucchini Meatballs are healthy thanks to using oat flour in replacement for regular plain flour. As well as this my zucchini meatballs are loaded with lots of fresh zucchini, making them PERFECT for hidden veggies for your kids.

They are also good for the low carb diet and are perfect for vegetarians. I was a vegetarian for most of the 90’s and love veggie loaded meatballs like this recipe.

Can You Freeze Zucchini Meatballs?

Absolutely! Whenever I have zucchini that I need to use up, I make a load of zucchini meatballs and then freeze them for another time.

If you’re on a road trip and want something easy to eat, then take these zucchini meatballs with you. Take them directly from the freezer and come late morning with the summer heat, they will be defrosted and perfect for snacking on.

Grated Zucchini In Meatballs

The easiest way to add zucchini to vegetarian meatballs is to grate it. What I will do is grate the zucchini first, squeeze the excess liquid from the zucchini and then place it into a bowl ready for making zucchini meatballs.

My zucchini meatballs recipe is more Greek than any other cuisine. They feature lemon, feta cheese and zucchini, along with Greek seasoning.

I love my Greek food and have enjoyed many happy holidays as a kid on the Greek Isles. Its somewhere I would love to take my own kids, but due to terrible connecting flights it has often been on the backburner.

How To Make Zucchini Vegetarian Meatballs In The Air Fryer?

When making zucchini vegetarian meatballs in the air fryer, everything is rather simple and not that different compared to making regular meaty meatballs.

You start by squeezing the excess liquid from your freshly grated zucchini and then placing it in a bowl. All the other ingredients that make up your zucchini meatballs are added in and you form meatballs from your ingredients.

After you have made your ingredients into zucchini meatballs you cook them on a high heat in the air fryer.

The reason for the high heat is that it helps crisp up the meatballs as without the meat, they need an extra push in the right direction to get them nice and crispy for you.

You can then eat them straight away, fridge them for later, wait until they cool down and freeze them, or whatever you want.

  • Preheat your air fryer to 200c/400f.
  • Start by grating your zucchini and removing any excess water from it by squeezing it out with your hands into a bowl.
  • Place your squeezed-out zucchini and your beaten egg into a mixing bowl. Add in the rest of your ingredients except for the oats.
  • In your blender place your oats on the high setting and blend until they resemble fine breadcrumbs.
  • Place the oats into the bowl a little at a time as it will go thick rather quickly.
  • Mix together and create bite sized zucchini meatballs.
  • Place in the air fryer for 10 minutes on 200c/400f.
  • Serve.

Notes

I prefer to cook my air fryer zucchini meatballs in the air fryer grill pan. It is perfect for foods that are a bit sticky and makes cleaning your air fryer so much easier. Plus, people will think that your zucchini meatballs came straight from the BBQ.
