I don’t know about you but it is summer time and I just can’t live without my salads. I just love them. In the summer it is often way too hot to even consider cooking and a salad is always the back up plan. I would even go as far as to say that in summer I just can’t be bothered to eat. Its warm and my body has other things on its mind so I have to remember to eat.
Last month I remember Dominic stood over me while I was on the laptop with a banana and my medicine like the mean head teacher in Matilda until I ate the banana and had my vitamins.
But if I could eat salad for breakfast, lunch and dinner in the summer months than I gladly would!
In this recipe it is all about my base and getting the salad bits cut quickly so that I can go and enjoy my salad. I will then treat this as the layer on top of my lettuce and then I will serve it with some freshly cooked chicken breast or some canned tuna.
It is heaven on a plate and reminds me of lovely summer food that allows you to get in and out of the kitchen as soon as possible!
