I am a HUGE cinema addict. I just love the movies. I have a collection of over 300 movies and I have favourites that I have seen over and over again.

Off the top of my head I can think of a few favourites that I have seen more times than I would admit to….Death Becomes Her, Naked Gun, The Shawshank Redemption, Philadelphia, The Lion King, Goodfellas, Breakfast At Tiffanys, The Next 3 Days, Saw and the list goes on and on.

I never found anybody (well until I met Dominic) that would enjoy a good movie as much as me. So before I met him I would head to the cinema solo and enjoy back to back movies.

I think the first time I did this was when I saw Toy Story for the first time. It was in a boring small town in East England and I was on holiday with my parents and there was nothing to do. I had a wonder into the town and found a cinema. So I was happy. I sat down with my popcorn and was lost in the movie.

I was 13 at the time and I have seen 100’s of 100’s of movies since and had a LOT of popcorn.

But there is a big problem with popcorn as far as I am concerned…..It is either too boring (just salt) or too unhealthy (the caramel version). There is no in between that I could get excited about, well that is until I made this:

How to make cheese popcorn.

Imagine just adding some really delicious cheddar cheese instead along with coconut oil? It gives you a delicious in between method rather than it being too low in calories vs too high in calories.

It is flavoursome and if you love cheese and you want something really special to snack on during the evenings then this is the snack of your dreams.

Make a quick batch of this for your next Netflix marathon, the next movie you plan to watch or even take it to work with you to snack on.

Though a bit of advice – keep it away from teenage boys (well if you want some) as they can eat a huge bowl of it in under 20 minutes. And then make you super jealous as they maintain their size zero body while you struggle to keep your flabby belly under control.

Plus you can change this for whatever cheese you fancy. I used some really nice cheddar cheese. Because being a British Expat that is the cheese of choice, but Swiss cheese like you would use in a cheese and ham toastie is equally perfect.

But never mind that, get out your Instant Pot, get it hot and lets dive in and make some popcorn!!!

Delicious cheesy popcorn. Served with cheese and garlic and tossed in coconut oil. Cooked perfectly in the Instant Pot for the perfect supper. Also perfect for a snack for your kids to take to school or on school trips.
Servings: 1 large bowl

Ingredients
  • Instant Pot
  • ½ Cup Corn
  • 1 Tbsp Garlic Puree
  • 160 g Cheddar Cheese
  • 2 Tsp Coconut Oil
  • Salt
Instructions
  1. Press the sauté button on your Instant Pot, then adjust it (+) to get it up to the hot setting. Then quickly add your coconut oil.
  2. Once the coconut oil has melted add the garlic, salt and corn and stir well until the corn is well coated.
  3. Wait until you start to see it popping and then place the lid on the Instant Pot, though you don’t need to seal it.
  4. After 2-3 minutes of popping, turn off your Instant Pot via the cancel button and leave the lid on so that the rest of the popcorn has a chance to pop.
  5. When it has finished remove the popcorn into a bowl and toss it in the grated cheese. As you toss it will melt the cheese and you will have this amazing melted cheese sensation.
Recipe Notes

When making popcorn in your Instant Pot it is a balancing act. Its important to get the corn cooking straight away, as if the Instant Pot gets too hot it will switch off. Also leave the lid on so that any leftover corn has a chance to pop.

I did another version where I used little spoonfuls of soft cheese as well. It was amazing and a great cheese sensation.

Low Calorie Cheese Popcorn

What I love about making cheese popcorn in the Instant Pot is the fact that it is really low in calories. Compare it to making caramel popcorn it is the complete opposite. Obviously there are a few more calories than what you have in the plain salt variety, but this is a cheese lovers dream come true.

The cheese melts into the warm popcorn and provides you with the best ever dinner or supper treat that you have ever tried. Then if you are on Slimming World then even better. You just syn the coconut oil and then use the cheese from your healthy extra allowance. Plus the great thing about popcorn is that you only need a few seeds for a really big sized portion.
