A delicious treat for the barbeque, to have as a side dish or something special for when you want that heavenly butter moment.

We all know nothing is better than butter and this recipe is a prime example of it.

I remember growing up on sweetcorn (or corn on the cob if that’s what you call it) and always remember that it was the best thing as a side dish at a barbeque.

It is also very frugal on the wallet and perfect for giving your kids something different for their dinner.

But it is not Paleo and this has meant that prior to testing the timings and flavours for this recipe I had not eaten sweetcorn for more than 2 years. And it tasted so good to be reunited with my sweetcorn.

But better than that, take the vegetarian element out of the recipe by adding bacon and you have this amazing taste experience.

I also find that ham also works very well as the outside wrapper or you could be really naughty and add a layer of melted butter or is that just wrong?

Edit – after making this I caught my daughter dipping her bread crusts into the butter, clearly she has very own ideas of how it should be eaten!

Ingredients

Instructions

  • Place 160ml of water into the bottom of your Instant Pot and you can measure it out with the cup provided.
  • Take your sweetcorn and place each one into a separate piece of silver foil. Season with salt and pepper. Layer each one with a little butter then wrap them in a slice of bacon. Seal up the sweetcorn with the silver foil and then place them on the steamer rack.
  • Place the lid on your Instant Pot and set the valve to sealing and press steam for 12 minutes.
  • Once it has started it will beep and it will beep 6 times when done. Once it has cooled down from keep warm mode you can get it out.
  • Serve.

Notes

Instead of butter if you are on Paleo you could replace it with coconut oil or olive oil instead.

Next is the turn of the corn on the cob for a little side dish to go with our meals. I am sat in the kitchen breastfeeding Jorge watching him prepare them and I can’t understand how something so simple can taste so good!

He then asks what other Paleo food is coming up and I point out that “this is as none paleo as he is going to get” to which he wants to know when we are making chocolate pudding in the Instant Pot.

I don’t think I am winning the healthy eating battle some how!
