Cuban Pork Fried Rice

My first taste of Cuban Pork Fried Rice goes way back to the Easter of 2006. We were on a family holiday to Cuba and it was just the two of us and Kyle.

Back then Kyle was just 4 years old and throughout our holiday everybody was mentioning how cute our 4 and a half year old was.

I remember him sleeping on me on the plane going home on the night flight in his pyjamas and everyone coming over to look at him on the way to the toilet.

Weird to say that now, as he sits beside me working for us as a soon to be 19 year old.

But back then in Cuba I have 3 main memories:

  • Lazy Days – we spent the days either by the pool or the beach and barely moved. It was the most relaxed holiday I have ever had. The water sports were great fun and we spent almost all day on the ocean.
  • The Camera – You spend your entire holiday taking memorable photos and then Dominic accidentally wiped the photos from the camera just before we left. We took a few emergency last minute photos, but the rest of it is all about the memories.
  • The Food – It was awful. We had paid for all inclusive and then to find out that you are presented with awful food is the worst thing. The only thing that tasted good was the Cuban Fried Rice and that is all I ate for 2 whole weeks.

All these years later, I am still obsessed with Cuban Fried Rice, so after making our instant pot brown rice, a Cuban version was top of my instant pot to do list.

Instant Pot Pork Fried Rice + Two Little Assistants

One thing that I am very passionate about is teaching my kids how to cook. I hate the fact that I entered adulthood without hardly any cookery knowledge and that just shouldn’t happen to kids.

We always need to eat and kids learning about nutrition and what goes into a meal is so important to me.

It is also one of the main reasons I became a food blogger and if I am testing a new recipe, you can guarantee that Sofia & Jorge will be in there with me.

They are still under six (at the time of writing this) and their mind is like a sponge, ready to soak up anything I throw at them.

They first entered the kitchen and helped me cook as newborn babies in their baby carriers and to them cooking is a big part of their day.

So, when I told them we were making instant pot pork fried rice, they were excited to make it with me and do as much of as they could.

Sofia even grabbed the phone to take the picture of the onions she had just sautéed:

They both argued over who mixed the Cuban spice blend too:

In the end they both did it together!

When the instant pot pork fried rice was cooked, they grabbed a bowl each for their lunch and were proud of the food that they had just made and then asked what we were making for dinner.

Instant Pot Pork Fried Brown Rice

I was very lucky to receive a large bag of brown rice and after learning how to cook basic batches of instant pot brown rice, I have been experimenting each day with different ways of making brown rice exciting in the instant pot.

This instant pot pork fried brown rice is the first of many that I plan on introducing to you over the next few months.

If you have not used brown rice yet to make pork fried rice, then you MUST. Because it is gluten free, it is much lighter than traditional white rice and the depth of flavour is fantastic.

You get to throw in all the different ingredients into the instant pot pressure cooker and its very much a dump and start instant pot recipe.

How To Cook Pork Fried Rice In Instant Pot?

Cooking pork fried rice in the instant pot is EASY and that’s one of the reasons it is perfect for teaching your kids to cook.

Instant Pot Pork Fried Rice Instructions:

  1. Mix your Cuban seasonings in a small container.
  2. Saute onion, garlic and ginger in the instant pot.
  3. Add in cubed pork and seasonings.
  4. Deglaze with soy sauce.
  5. Rinse and add brown rice.
  6. Add stock, stir, seal and cook.

Yes really, that is all there is to it when you pressure cook your pork fried rice. It is a very easy recipe and one that you make ahead for your weekly lunches or take with you to work as it tastes nice cold too.

Cuban Fried Rice Seasoning

The Cuban fried rice seasonings are not complicated, and I have them all in my pantry, so I had no online ordering to do for obscure items.

The main Cuban fried rice seasoning blend includes:

You can also give it to your children to mix for you, like I did as they love helping with these kinds of jobs in the kitchen.

Instant Pot Pork Shoulder & Rice

My favourite pork to use in my pork fried rice is pork shoulder. Here in Portugal they sell cubed pork shoulder.

It is much cheaper than a classic pork shoulder or Boston Butt and I often use it in our Slow Cooker Asian Pulled Pork.

But what I find is that the cubes are way too big for making this instant pot pork fried rice and will cut them down into much smaller pieces before loading them into the instant pot.

Another reason for using pork shoulder is that it produces a much tender cut of pork and you will be thankful that you used pork shoulder when you taste the fried rice.

Instructions

  • Mix Cuban seasonings in a small ramekin.
  • Peel and thinly dice your onion and load it into the instant pot pressure cooker. Click sauté and add a little extra virgin olive oil. As it heats up peel and grate your ginger and garlic. Sauté your onion for 2-3 minutes or until the onion starts to change colour. Cancel sauté. Add in ginger and garlic and stir for a couple of minutes.
  • Thinly cube your pork shoulder and add it the instant pot along with the Cuban seasonings. Stir well until everything is mixed and the seasoning is coating the ingredients equally.
  • Deglaze the instant pot with soy sauce.
  • Rinse and pour in your brown rice.
  • Add in your stock.
  • Stir, place the lid on the instant pot, set the valve to sealing and the cook time to 18 minutes on manual pressure cook.
  • After 18 minutes cook time allow for 5 minutes natural pressure release and then remove any excess pressure.
  • Fluff up the pork fried rice with a fork and serve.

Notes

You can use any garlic and ginger. Grated works well but an easier option is lazy garlic and lazy ginger.
If you want to make more, double all the ingredients and make a batch that will easily cover your lunches for a few days.
Keep it gluten free by swapping soy sauce for this.
I recommend this brand for healthy bone broth and soup based stocks to use in the instant pot. They are much healthier, but best of all they make your food taste so much better and give a much better pressure cooker flavour.

  1. If I have cooked pork already, I can add at the end of the cooking of the rice? Sounds delicious and looking for rice recipes that will not spike Hubby’s blood sugar. Thanks
