We are back with another of our Sunday family meals. One that includes a delicious starter, a dessert, the main course and of course leftovers.

Could we do it all for a fiver? And include Irish Beef Stew in the Instant Pot as part of the deal?

Well we hope so!

Later this month it will be St Paddy’s day, well to be exact March 17th. I have Irish in the blood, so it is only natural that we have an Instant Pot Irish Beef Stew recipe for you to get excited over.

I had an amazing grandma growing up. She was amazing. She was called Bridget but to all her friends and family she was Babs.

She had beautiful curly blonde hair and from pictures of her from the 1950’s right through to the 1990’s she had the exact same beautiful hairstyle.

She had beautiful legs and always looked well groomed. You could see why my grandad only had eyes for her.

She died at the age of 78 when I was 16.

She was Irish born and would tell me amazing stories of Ireland and the first few years of her life and how she moved to England. Before residing in the Yorkshire town where I grew up.

She never had much of an appetite was super skinny, but absolutely adored her carbs. I would go around with some chips and scraps from the local chippy and we would gladly share some together and get excited by how delicious they tasted.

The same went for jacket potatoes, fishcakes and quiche. We loved them all and had them frequently.

But she would always talk about during the war and how you can make some beef last to feed four of them (3 adults and 1 toddler) and how rewarding it was to eat well for less.

She was also a true expert on feeding a family on a budget. With a low income and 5 daughters as well as my grandad it must have been really tough for her.

This Instant Pot Irish Beef Stew is dedicated to everything Irish. My amazing Grandma Babs and my great grandma that cooked amazing frugal Irish food and then passed it down the generations so this modern generation that we live in can have the BEST EVER Irish beef stew in the Instant Pot.

I could just imagine my grandma trying to work out how to use an Instant Pot. I think it would have been really funny.

Especially, when the closest my grandma got to technology was changing the channel on the TV!

Instant Pot Irish Beef Stew

Instant Pot Irish Beef Stew. Hearty winter food that warms you up on a cold day. Cooked in the Instant Pot making it a much quicker meal to cook. The beef is incredibly tender and perfect for if you have cheap cuts of meat.

  • Start by preparing your stew ingredients. Peel and dice your potatoes, onions and carrots. Clean and dice your leeks and celery stalks. Remove the core and dice your tomatoes. Chop your stewing steak into chunks and remove any excess fat.
  • Place the chopped beef into the Instant Pot inner pot in batches of 3. With each set add salt, pepper, 2tsp of olive oil and a teaspoon of thyme. Place the Instant Pot on sauté and brown the meat on both the top and the bottom.
  • Remove the meat as you do the batches and have a spare plate to hand for it.
  • When the beef has been seared the removed from the Instant Pot add the onion. You will still have the flavour from the beef and add an extra teaspoon of olive oil, so it is not dry. Keep cooking the onion until it is soft.
  • When the onion is soft add the rest of the vegetables and give it a good stir. Then add your seared beef back into the Instant Pot.
  • Add the seasoning along with the Guinness and the beef stock.
  • Place the lid on your Instant Pot, set the valve to sealing, cancel sauté and cook for 45 minutes on the meat and stew setting.
  • When cooked remove any excess liquid and stir.
  • Serve with bread or dumplings.

Notes

I used 1 full can of Guinness. It is 440ml and the perfect size for making a beef stew with. One full can of Guinness might seem like a lot, but remember pressure cooked food loses a certain amount of flavour, so you always need more seasonings that you would in a slow cooker recipe. Its best to do the beef searing process in sets of 3.
 
This is because you don’t want to overcrowd the meat and it gives you the best results. I timed it and the time it took to go to pressure was 15 minutes. This means that along with sauté time and pressure cooking time that this Instant Pot Irish Beef Stew takes 65 minutes to cook from start to finish.
 
The reason the time to pressure is so long, is because the Instant Pot is full and it’s above the minimum liquid of 1 cup. When you add the beef stock we used one beef OXO cube mixed with 500ml of cold water. Adjust this to suit, but the general rule is that the liquids must nearly be touching the top of the stew ingredients.
 
Less than this and you won’t have enough liquid, more than this and it will dilute the flavour. Many Instant Pot Irish Beef Stew recipes call for flour. I HATE flour in my stews and casseroles and it not only makes a delicious healthy meal unhealthy, but its not necessary. Instead ladle out the excess liquid at the top of your stew until you can no longer fill a ladle with excess liquid.
 
In this recipe we filled 8 ladles and put those ladles into a bowl for later. Then stir and you will now have a creamy stew without having it feeling too watery. If you scroll down to our leftovers section, you can see EXACTLY what we did with our 8 ladles!

The benefit of cooking your Irish Beef Stew in the Instant Pot is that everything is in. You really don’t need any extra sides such as mash or dumplings to make it work for you. It tastes good just as it is.

But what we did was use the leftover bread from our soup to dunk into it and mop up the Guinness gravy with.

We went with our Shortbread Fingers in the Air Fryer for dessert today. Its not Irish but Scottish and OMG it tastes so good. There are just 3 ingredients involved all of which are easy to find and when you see how much it costs to make you will be shocked.

There was still quite a bit leftover in the bottom of the Instant Pot for another day. What we decided to do was blend it in the blender and then use it as an Irish gravy.

It produced 8 ladles of leftover stock that we had removed after cooking. As well as this we had ½ a portion of beef stew leftover too. We simply added them together in a blender and it was like a thin gravy.

Then the next day serve it with some Instant Pot Mash. Potatoes are at the cheapest for us at this time of the year, so it is perfect timing for doing this.

You then have a delicious meaty mash and gravy meal for the day after that can easily feed a family of 5.

Or PLAN B you can have it with sausages too and some onions for sausage, mash and onion gravy.

Cheap Meals For 5

I had promised you cheap meals for 5. A meal that you can put together on a Sunday to feed the 5 of you for $5 or less. But most importantly, one that requires very little effort, so that you can get back to your family time.

It’s always nerve racking when you do this type of content on a food blog, as you’re always wondering if you are going to come in on budget or look like an idiot.

Well todays Sunday Cheap Meal for 5 worked out as follows:

We loved this fortnights Sunday dinner. We used leftover vegetables to make the Instant Pot Irish beef stew with and got to go back to basics and remember childhood. We also got to eat the leftovers with mash the next day.

Even better, our meat was free thanks to the supermarket loyalty programme that we use.

Prices may adjust from country to country, but these are the prices we paid in Portugal and works out at $5.20 for five people. Though this Instant Pot Irish Beef Stew is at the time of writing this post based on current exchange rates. We find that compared to the US our prices are identical. This is because we pay a lot more for our meat and dairy, yet a lot less for fruit and vegetables that it levels itself out.

    I tried this recipe last night (sorry no pics), but substituted regular potatoes with Sweet Potatoes (my husband is taking a year of no potatoes except healthier versions). It was a hit! The sweet potatoes added extra sweetness and flavor, I would recommend more Guinness as we lost some of that flavor. The sweet potatoes did get pretty mushy, but that only made it into a thicker stew.
