Welcome to my Instant Pot pork roast recipe.

Welcome to my Instant Pot pork roast recipe. If you want to enjoy delicious home cooked pork roast that is crispy but not chewy then this Instant Pot recipe is just perfect for you.

I spent years with a desire to own a slow cooker. The thought that you could just throw in your food and then you could have your own tender meat to eat with lots of sides that would be perfect for Sunday dinner.

It took nearly 5 years to get my wish and thankfully I was eventually given one. I never thought of a future when I would make peach cobbler in it, all I was thinking about was beef stew, pork roast and of course pulled pork. It became my slow cooker life.

Then 12 years later I became the proud owner of an Instant Pot and thanks to its slow cooker function I could imagine a life where I would make meaty Sunday roasts in it.

But because of all the other things I wanted to cook in it, I have only just got around to perfecting my pork roast recipe.

Well actually that is not really true. It is Dominic’s Instant Pot pork roast recipe, but he would have let me take the credit for it, as he is a nice husband like that!

But back to the roast pork recipe, it is easy to make with readily available seasoning and you can just throw everything into the one pot.

Also don’t think that you need the glass lid for your Instant Pot to make this recipe, as we did it without, but you can always buy one if you feel you would need it a lot.

You could also use this recipe as a base for other types of meat. For example it would also work very well with lamb or beef too.

Instant Pot Pork Roast Recipe

Welcome to my Instant Pot pork roast recipe. If you want to enjoy delicious home cooked pork roast that is crispy but not chewy then this Instant Pot recipe is just perfect for you.
Prep Time5 minutes
Cook Time4 hours
Total Time4 hours 5 minutes
Course: Main Course
Cuisine: Instant Pot
Servings: 4
Calories: 91kcal

Instructions

  • Place the olive oil and the coconut oil in the bottom of the Instant pot and use the palm of your hand to rub it about so that the bottom is well covered.
  • Place the pork shoulder into the Instant Pot on top of the oils.
  • Score the top of the pork.
  • Mix all of your seasonings and the chicken stock cube in a bowl and then rub into the top of your pork.
  • Place the lid on your Instant Pot and cook on the slow cooker setting for four hours.
  • Take the lid off and allow to rest for 10 minutes before serving.
  • Serve with warm crusty bread or in wraps.

Notes

When you score the meat it is just like slashing small lines into the top of your pork with a sharp knife. It means that when the seasoning is added it will drip into the holes as it cooks and gives a much better flavour.
If you have a preferred pork marinade you could follow the timings of this recipe and do your own DIY job.
We have found the best place to source pork shoulder to make Instant Pot Pork Roast Recipe is from ButcherBox. You even receive free bacon and $10 off your first order when you sign up with this link.
For the best chicken stock in your recipes I would recommend Kettle & Fire. Unfortunately they are not available in the UK so if you are UK based I would use OXO cubes.

    • Hi Ed

Yes the recipe should work exactly the same. The only thing i would be aware of is the cooking time. With the instant pot we have found that it cooks things on slow cooker mode faster than our own crock pot by about an hour.

      Regards

      Dom

    • Hi Barb,

I have never heard of bullion before so couldn’t comment on that. But you don’t need any liquid as pork carries a lot of liquid on its own and cooks perfectly without it.

      Kind regards

        • Hi Linda,

No i have never heard of Bouillon but Dominic said he had when he was a chef. And yes I am based in Portugal though from the UK originally.

Yes you could cook this in an oven. I would cook it on 350 degrees F (175 degrees C) for no more than 1h 20 minutes.

      Thanks.

WELL I ADMIT I HAVE NOT TRIED YOUR RECIPE FOR PORK, BUT I BOUGHT AN INSTANT POT TO USE AS A PRESSURE COOKER AND REPLACE A SLOW COOKER. MY EXPERIENCE WITH IT AS A SLOW COOKER IS PRETTY DISASTROUS – I DONT THINK IT HEATS UP AS MUCH AS A SLOW COOKER (AND MINE IS NOT A REAL TOP OF THE RANGE ONE, BUT PRETTY AVERAGE) I FOLLOWED A RECIPE FOR 4 HOURS WHICH INDICATED TO COOK ON LOW, AND I WAS A BIT DUBIOUS SO I COOKED IT ON MEDIUM (NORMAL) AND IT CERTAINLY WASNT HOT ENOUGH OR COOKED ENOUGH. I FINISHED THE DISH IN AN OVEN IN A LE CREUSET POT, WHICH IS DEFINITELY NOT WHAT I WANTED. ANY OTHER PEOPLE COMMENTED ON SLOW COOKER FUNCTIONS? OTHERWISE THE PORK LOOKS WONDERFUL!!! BUT I WILL DO IN THE OVEN.

I did this recipe in the Pressure mode! Delicious. I lightly browned on saute’ and I added wine to the bottom. Pressure cooked 20 minutes per pound. I have also used a boneless pork loin 2 pounds or more.

    • Hello, I just used my IP on the slow cook function for the first time today. I agree with you; after 5hrs. The meat (swiss steak) was barely warm. I had concerns too, that it probably wasn’t cooking properly. I finished it off in my oven. I’m beginning to wonder if the slow cook function is working?? What a “big” disappointment.

    • Hi El

Thank you for letting us know. Sorry about that 🙁

The chicken stock needs to be added when the other seasonings are rubbed into the pork after scouring it.

  2. Hi Sam, I want to use this recipe for a 5-6 lb. boneless pork loin roast. Any added suggestions? I’m wondering about putting it on the Sautee setting 1st to brown it, then cook for the 4 hrs?

    • Hi Paula,

      Sorry for the late reply.

Browning it first is a great idea and i do that with all the meats i cook either in the instant pot or otherwise. Cooking for the 4 hours should be fine on the slow cooker setting but be careful as some people are having trouble with that setting as it is over cooking sometimes and then some people are saying it is under cooking there roasts.

Let me know how you got on.

      Kind Regards

    • Hi Gabby,

Sorry for the late reply. Can I ask what size your roast was before it was cooked. Also we are finding especially with the comments we are getting the slow cooker function is differing on different instant pots. Some people are saying it is cooking quickly in slow cooker mode and some like yourself are saying it is taking ages to cook.

To reset the temp and time keep your finger on the keep warm button and it will cancel your program that you set. Also which lid are using because instant pot do a proper slow cooker lid to fit.

If you need any more help please feel free to post again.

      Kind Regards

  4. Looking at the recipe for Instant Pot pork roast done in Slow Cooker setting – calls for 1 tablespoon of “mixed herbs”. Can you advise which herbs are mixed together??

    Reply
    • Hi Rose,

The mixed herbs are usually a mix of these from the uk:

      Marjoram, Basil, Oregano, Thyme

You can mix your own if you have everything in and add different ones to change the flavours.

      Kind Regards

    • Hi Norma

Yes i would put the pork on for 50 minutes depending on the size and how you wanted it cooked. For example either falling apart then i would cook it for 1h 15 mins but 50 minutes should be fine if you want to be able to slice it.

      Kind Regards

Hello, I see you have Worcester sauce in there. You don’t mention when to add it in the instructions, and because it’s not a spice I wasn’t sure you add it to the rub mix – that and a rub is usually dry. Can you clarify?
