Instant Pot Tuscan Chicken Pasta

Instant Pot Tuscan Chicken Pasta is my go to cold pasta dish in summer. We live in Portugal and it gets very hot in the summer and a cold pasta dish like Tuscan chicken pasta is a dream come true.

Each summer we rotate an annual pass with one of our favourite local attractions. This summer it is for Zoo Marine. It is a family focused aquamarine place that is similar to SeaWorld just with less rides.

It costs us about $80 each and as it is open from April until November allowing us to get good use out of it.

We go to see the dolphins, sealions, jump in the swimming pool, go on some rides, head to the aquarium and just have some family fun.

For lunch it is normally a picnic as we sit on our sunbeds by the swimming pool. One essential part of the picnic will be a cold pasta dish that I made earlier.

Usually, Tuscan chicken pasta, or some other time it might be tuna pasta. Just because they are both high in carbs and high in protein and keep the kids full so that they can go and play again and burn some more calories after a refuel.

Often the night before we go, I will prep the picnic and make a portion for the evening for us to share, along with another portion for the picnic the next day.

As I write this Instant Pot Tuscan Chicken Pasta recipe up for you today it is on the verge of summer and I am dreaming about eating my Tuscan Chicken Pasta in the sunshine served cold.

You can make it in advance and place it in freezer containers for when you want to eat it. I like to make some in bulk and then it will cover a few days out when a picnic is essential.

When I am serving it cold from the freezer, I will add a little mayonnaise or some Greek Yoghurt.

This will make it creamy again and stop any dry texture and it will taste just like a Tuscan Chicken Pasta that you ate at a barbecue or took with you on picnics.

You can also serve your Tuscan Chicken Pasta warm. Just as you have cooked it and warm out of the Instant Pot. It is great for a quick lunch or dinner or for when your body tells you it needs a carbs hit.

Cooking Tuscan Chicken Pasta In The Instant Pot

This Instant Pot Tuscan Chicken Pasta is so much faster thanks to the Instant Pot Pressure Cooker.

You start by sautéing your red onion and garlic and then throw in the rest of the ingredients and it turns into a classic dump and go Instant Pot recipe.

How To Cook Tuscan Chicken Pasta In The Instant Pot?

It is very easy to make Tuscan chicken pasta in the Instant Pot. There are two main stages to it:

  • Stage 1 = sautéing
  • Stage 2 = dump and go

Though I am sure you will LOVE stage 2 the most, as that’s when you throw everything in and just return to the kitchen when the Instant Pot beeps and it is done.

You might be binge watching a new show on Netflix or feeling tired and don’t want to be stuck in the kitchen.

Then after stage 2 you give your Tuscan Chicken Pasta a quick stir and serve it up. Or if you plan to freeze it for later, place it into freezer containers, wait for it to cool and then place it in the freezer for later.

How Long Does It Take To Cook Tuscan Chicken In The Instant Pot?

Just like our Instant Pot Tuscan Chicken recipe that we shared with you yesterday, it is a quick and easy recipe.

Expect it to cook for 6 minutes on manual pressure plus allow some extra time for the sauté process at the start of the recipe and mixing everything at the end of the recipe.

Though add on a couple of minutes if you’re cooking your Tuscan Chicken Pasta using frozen chicken.

I know some of you will be on Slimming World or Weight Watchers and will be looking at a way to have Tuscan Chicken Pasta without piling on the pounds.

Well there is a solution.

Pasta itself is low in calories, points and syns, meaning that the high calories is in one area:

  • Creamy Sauce

To achieve the creamy Tuscan Chicken sauce when you are on Weight Watchers, simply swap the soft cheese and the coconut milk for fat free alternatives. Such as Fromage Frais, Quark or cottage cheese.

It tastes just as good and Fromage Frais in Tuscan Chicken Pasta is one of my favourites.

Ingredients

Kitchen Gadgets:

  • Instant Pot Pressure Cooker

Recipe Ingredients:

  • 4 Large Chicken Breasts diced
  • 500 g Pasta
  • 100 ml White Wine
  • 500 ml Chicken Stock
  • 150 ml Greek Yoghurt
  • 200 g Cherry Tomatoes halved
  • 150 g Soft Cheese
  • 150 g Grated Parmesan Cheese
  • 2 Tbsp Italian Seasoning
  • 1 Small Red Onion
  • 1 Tbsp Olive Oil
  • 7 Medium Garlic Cloves
  • 2 Handfuls Fresh Spinach
  • 1 Handful Fresh Basil thinly shredded
  • Salt & Pepper
Metric – Imperial

Instructions

  • Start by peeling and thinly slicing the red onion and the garlic. Place it into the Instant Pot along with your olive oil and sauté for approximately 3 minutes while the onions soften.
  • Secondly, deglaze the Instant Pot with the white wine and the chicken stock. Then cancel the sauté.
  • Thirdly, add the chicken breasts, pasta, seasonings and mix well.
  • Place the lid on the Instant Pot, set the valve to sealing and cook for 6 minutes on manual pressure.
  • Use QPR (quick pressure release) when it is done and give it a good stir.
  • Add in the rest of the ingredients and place it on sauté and allow to cook for a further 3 minutes or until you have a creamy Tuscan chicken pasta.

Notes

If the pasta sauce is too thick add in some extra Greek Yoghurt. Or you can swap this for some mayonnaise. Read my original Instant Pot Tuscan Chicken recipe as it gives some good insights into food swaps when making Tuscan chicken.
The stock we LOVE for adding to our Tuscan Chicken Pasta is Kettle & Fire. They do some amazing flavours and we love them for pasta dishes, rice dishes and creamy sauces.
