Instant Pot Tuscan Chicken Soup

Instant Pot Tuscan Chicken Soup is another of my dream leftover meals that I am hooked on. I love to make a delicious lunch, save a little for later and then use the leftovers for dinner later in the day.

It not only means that no food is wasted but it also means that you can be lazy, and you don’t have to make much effort with dinner.

When it comes to cooking, I am rather old fashioned and old school like my late Grandma. She used to always have dinner ready and on the table for exactly 5pm. It would not be a second late or a second early.

At home with my own parents, we rarely all ate together at the dinner table and I must admit, we were just as bad doing this, until we made a New Year

Resolution as the bells rang in for 2018. Since the beginning of 2018 we have always had lunch and dinner on the table together.

But even though my food tastes good, I am terrible for being late with it and that is why I love to cook meals from leftovers in the Instant Pot, as it can speed me up a lot.

Plus, when you set the table, you can place the Instant Pot in the middle of the table with a ladle and then everyone can help themselves to what they want.

If you don’t eat together as a family at the dinner table, I highly recommend doing so. It helps with family bonding and is a great way to teach your children table manners.

Instant Pot Tuscan Chicken Soup (from leftovers)

I follow the principles of my Instant Pot Tuscan Chicken Soup with many recipes that I have where there is surplus food.

Sometimes there will just be a little left in the bottom of the Instant Pot and I will be thinking how amazing it would be made into something else or used to a sauce for the basis of a recipe.

Another example of this is my Pressure Cooker Creamed Corn. Sometimes I will end up with the leftover sauce at the bottom and then I can add some extra soft cheese and milk to it, and I have a big cheese sauce.

I can then add it to the top of a lasagne, mix it with macaroni cheese, or whatever I am cooking for dinner.  

Think about next time you have a stew; it doesn’t have to be like the example I am using today with my leftover Instant Pot Tuscan chicken stew, it could be any stew you like.

That last ladle of stew that nobody wants can be saved and used in something delicious the next day or if its lunch, you can serve it for dinner.

Just add extra liquid to it, extra vegetables and then hey presto you have an impressive dinner.

Cooking Tuscan Chicken Soup In The Instant Pot

What I love about making leftover Tuscan Chicken Soup from the last bits of Tuscan Chicken Stew, is that I have the same amount of washing up and prep, as I would if I was just making my Instant Pot Tuscan Chicken Stew.

You see you have cooked your Tuscan Chicken Stew in the Instant Pot already, then served lunch from your Instant Pot and then the next day, cooked your leftovers in the Instant Pot.

And yet again used your Instant Pot, to serve dinner at the dinner table.

Then because you made soup with your final Instant Pot meal, it will have deglazed the Instant Pot and means that when you finally wash up your Instant Pot inner pot, it will be easy to wash.

How To Cook Tuscan Chicken Soup In The Instant Pot?

Cooking Tuscan Chicken Soup in the Instant Pot is so, so easy. When I think of meals that you could teach people that can’t cook or don’t want to cook, well this would be one of those Instant Pot recipes.

You have your stew leftovers already in the Instant Pot, dump in the rest of the ingredients, cook and when it beeps, stir and serve.

Of course, you can mix, and match based on what leftovers you have in.

  • Use up any vegetables that are starting to turn
  • Add your favourite cheese
  • Add leftover pulses
  • Use any leftover fish or meat
  • Add your favourite stock

And before you know it you have created an amazing leftover soup that you feel proud to serve up.

Or another favourite of ours is when it’s the night before grocery shopping day and you have some vegetables and potatoes that need using up before grocery day.

How Long Does It Take To Cook Tuscan Chicken Soup In The Instant Pot?

What if I told you, that to cook Tuscan Chicken Soup in the Instant Pot, took just 1 minute of cooking time?

Well it is true; it is just 1 minute to make a leftover Tuscan Chicken Soup. Or you could change the flavours and make your leftovers into a leftover chicken corn chowder if you wanted to.

  • Place into the Instant Pot inner pot, your leftover Tuscan Chicken Stew, frozen vegetables, chicken stock and white wine.
  • Place the lid on the Instant Pot Pressure Cooker, set the valve to sealing and cook for 1 minute on manual.
  • When it beeps use QPR (quick pressure releasto manually release pressure.
  • Place the soup on sauté and add in the rest of the ingredients, stirring it well so that it doesn’t burn and so that the spinach has a chance to cook.
  • Serve it when the spinach has reduced in size and the tomatoes have popped.

Notes

For frozen vegetables we used a mixture of cubed potatoes, sprouts, peas and cauliflower.

I recommend using Mascarpone as it gives it a wonderful creamy soup base and makes it taste like you have spent hours prepping the Tuscan chicken soup.
We recommend that if you don’t have your own homemade stock that you use this chicken bone broth.
