Instant Pot Tuscan Chicken

Instant Pot Tuscan Chicken is one of my addictions. I love the fact that not only does it taste truly AMAZING but the ingredients are so easy to source or alter and still have that incredible depth of flavour.

I love Mediterranean food. Growing up in England you had your holidays on the Med and I would visit countries like the Greek Isles, Spain, Portugal and of course France. You came back from your holiday and always felt like you needed to lose 30 pounds.

It was those creamy sauces that they served the chicken in that you ate so regularly in France and Greece or the loaded paellas that you ate in Spain and Portugal.

No wonder now that I have lived in Portugal for over a decade that I always want to go on a diet!

I have also had a thing for Italian food for as long as I can remember. I love the authentic pizza, pasta and creamy chicken dishes, which to me are just like what you get in France. Or the meatballs like my aunt used to make. She married an Italian soldier, so she became very good at doing the Italian cuisine and taught me a LOT.

When I make Instant Pot Tuscan Chicken it feels like all my favourite comfort foods come together in one dish and remind me of summer holidays and catching up with family.

It wasn’t until I started typing up my Instant Pot Tuscan Chicken recipe for you from my recipe notes that I realised something.

How much I mix and match my ingredients depending on what I am cooking. I am a frugal working mum and don’t have time to go grocery shopping or go on a mad hunt for kale when it is unavailable or out of season.

The closest place we have for sourcing kale is a 20 minute drive away and the same for sun dried tomatoes. Yet I don’t like them much and would much rather use cherry tomatoes and fresh spinach instead.

Instead when you make a Tuscan Chicken in the Instant Pot, use your imagination and do food swaps, just as long as the basics of Instant Pot Tuscan Chicken is covered.

  • Creamy Sauce
  • Chicken Breast
  • Greens
  • Tomatoes

For the creamy Tuscan sauce, you can use:

For the chicken breast you can swap it based on fresh, frozen, cubed or even thinly sliced like a stroganoff.

For the greens in your Tuscan chicken you can use:

  • Kale
  • Swiss Chard
  • Spinach

For the tomatoes in your Tuscan chicken you can use:

For the more authentic Instant Pot Tuscan Chicken you would want to use sun dried tomatoes, kale, whole chicken breasts and fromage frais.

In our recipe for Instant Pot Tuscan Chicken we have no access to Fromage Frais, kale or sun dried tomatoes. Therefore we have swapped them for soft cheese, coconut milk, cherry tomatoes and spinach.

Don’t feel guilty if you want to swap your kale for spinach as it tastes just as good.

It wasn’t a plan to make my Instant Pot Tuscan Chicken Keto but it is! I like my carbs too much and don’t have that much fat in my diet, so keto doesn’t suit me on a regular basis, but its nice when I can offer a Keto recipe to my Keto readers once in a while!

If you follow Keto and want to keep our Instant Pot Tuscan Chicken as Keto as possible, then do add double cream instead of a lower calorie option like fromage frais.

Cooking Tuscan Chicken In The Instant Pot

This Instant Pot Tuscan Chicken is the type of recipe that a few years ago, I would have dreamed of making in the Instant Pot.

I would have cooked it in the slow cooker and then moaned over and over again that my 1970’s slow cooker didn’t have a sauté setting.

It was the effort you went to, to brown your meat in the pan and then to transfer it to the slow cooker, you just wished at the time there was a better option.

That is why I am so grateful to have an Instant Pot for making Tuscan Chicken with. You can do the sauté first, get everything ready, lock the lid in place and then let it cook your Tuscan chicken super fast.

How To Cook Tuscan Chicken In The Instant Pot?

There are a handful of steps for cooking Tuscan Chicken in the Instant Pot, but it so easy to follow and get your head around.

We cook our Tuscan chicken in the Instant Pot as follows:

  1. Sauté the red onion and garlic in the Instant Pot first to kick start the amazing flavour.
  2. Add the white wine to deglaze the Instant Pot.
  3. Dump in the chicken and seasonings and stock into the Instant Pot and cook.
  4. Remove the chicken and add in the vegetables and the creamy sauce ingredients.
  5. Stir until you have a creamy sauce that you want to eat forever.
  6. Add the chicken back in and serve.

I love to take the Instant Pot to the dinner table once it is cooked, grab a ladle and serve up for your family.

If not on Keto, extra bread is required to mop up the creamy sauce leftovers.

How Long Does It Take To Cook Tuscan Chicken In The Instant Pot?

It is really QUICK considering what a delicious dish you’re making and that it has a few things to do to perfect it.

The time for the prep at the beginning of the recipe is down to how long it takes you to sauté the onions and then the main process when the chicken is cooking is JUST 6 minutes. Then a further 3 minutes at the end to cook the extras and make the creamy sauce.

Add this together and for the average home cook that is fairly new to the Instant Pot it is about 12 minutes combined.

Imagine that….homemade Tuscan chicken in the Instant Pot in JUST 12 minutes.

  • Peel and garlic and onions and thinly slice them. Place them into the Instant Pot inner pot with the olive oil. Cook for approximately 3 minutes on the sauté setting or until the onion has softened.
  • Deglaze the Instant Pot with the white wine and cancel the sauté setting.
  • Add to the Instant Pot the chicken stock and Italian seasoning. Stir well so that it is well mixed.
  • Submerge the chicken breasts and season the top of them with salt and pepper.
  • Place the lid on the Instant Pot and cook for 6 minutes on manual. Use QPR (quick pressure release) when it beeps.
  • Remove the chicken breasts and put to one side.
  • Add to the Instant Pot your coconut milk, cheese, spinach and cherry tomatoes. And keep stirring for a few minutes or until the sauce has thickened up and your cherry tomatoes have softened.
  • Add your chicken breasts back into the Tuscan sauce and serve.

Notes

Read my notes above the Tuscan Chicken recipe about what subs you can do. Especially if you don’t have any seasonal kale or sun dried tomatoes. Cherry tomatoes cook best if they are halved before cooking.
You can use any cream to make your sauce thicker. I love the combination of coconut milk, soft cheese and parmesan to make mine just right. If you are on a diet you can make our Instant Pot Tuscan Chicken lower in calories by swapping coconut milk for Fromage Frais.
If using frozen chicken breast in your Tuscan chicken cook the chicken for 8 minutes NOT 6 minutes. Also, if you’re using diced chicken, cook for 4 minutes instead of 6.
The stock we LOVE for adding to our Tuscan Chicken is the Bone Broth brand called Kettle & Fire. They do some amazing flavours and it gives you a guilt free stock to use in your Instant Pot dinners.

      On the latest soups we have done there is a button under the ingredients to change from metric to imperial. But on the older soups we have not got around to updating them at the moment but we will let you know when we do 🙂

  2. Hi, this looks great and thanks for using metric measurements as well.
    I am new to Instant Pot cooking.
    After cooking the chicken, do you use the Saute setting to make the creamy sauce or just the heat in the pot from cooking the chicken?

      We are British born and Recipe This started on metric and we added imperial in 2018 when our US audience grew and requested it.

      Good luck with the instant pot.

      I use the heat from the chicken. But if the heat is not doing a good enough job then you are welcome to turn on the saute for a minute or two.
