Lemon Chicken Marinade. This is my BEST EVER lemon chicken marinade recipe. It is perfect for if you are looking for a lemon marinade for chicken that you can use over and over again in a range of meals. Plus, one that is so EASY to do that even your kids could make.
I MUST start by saying if I could just have one cheap meat for the rest of my life it would be CHICKEN. It is so versatile that I could cook a different chicken recipe everyday for 3 years and still not run out of chicken recipe ideas. You can bake it, grill it, airfry it, soup it, pasta it, pressure cook it, shred it and even use its bones to make chicken stock.
We must buy more chicken than any other meat and often will have at least 40 lots of chicken in our freezer at any one time. We have whole chickens, chicken breasts, chicken legs, chicken wings and plenty of chicken thighs too.
But what I love most is using my chicken to make a delicious chicken marinade that I can just throw all the ingredients in and then cook away. Your chicken goes from boring to interesting thanks to a chicken marinade.
But the one dreamy chicken marinade flavour for me must be a lemon chicken marinade. Or even better the frugal girl in me is most impressed about using lemons from her lemon tree for making the lemon chicken marinade even cheaper.
Living here in Portugal the citrus trees rule our world. Everyone has at least one. We have a lemon tree, lime tree, orange tree and a tangerine tree. Though I should add that we have only just got our orange and tangerine trees, so they have yet to produce us with lots of orange coloured fruit yet!

The standing joke here in Portugal is people stealing oranges. This is something that is rarely spoken about among the tourists but we all know it happens. There are more oranges grown here than people to eat them and a lot of people have trees that are located on the side of the road. Therefore, people help themselves to oranges and then often sell them on to the tourists.
I remember being so proud bringing home an orange that had fallen onto the road when it was really windy, and this big orange tree was dropping them from someone’s garden into the road as I walked.
Why Make A Lemon Chicken Marinade?

How To Make A Lemon Chicken Marinade
A lemon chicken marinade is really easy and is just a few short steps:
#1 Get all your lemon chicken marinade ingredients out ready on your chopping board.
#2 Mix together your ingredients into your citrus press
#3 Rub the seasoning onto the chicken
#4 Pour the marinade into the freezer bag
#5 Add the chicken, shake the bag and leave to marinate together

Lemon Chicken Marinade
- Peel and chop the garlic cloves into chunks.
- Using a citrus press juice 2 lemons.
- Take the lid off the citrus press, add to it your garlic and then season it further with oregano.
- Place the citrus press ingredients into a freezer bag.
- Lay out your chicken breasts onto a clean chopping board. Season them with salt, pepper and chicken rub.
- Add them to your bag, give it a shake and then you’re done.
For portion sizes 1 chicken breast can be rather large. Therefore, ½ a chicken breast per person is fine when you add potatoes and vegetables to your dinner plate. You could use 4 small to medium lemons or 2 large ones to make your lemon chicken marinade.

Lemon Chicken Marinade – Rapid Recipe
In the lemon chicken marinade recipe above, it’s a great recipe, but a lot of people hate peeling garlic cloves and don’t want to go to much effort. They just want a lemon chicken dump meal.
Well this is your plan B lemon chicken marinade:
- Instead of using fresh garlic add a heaped teaspoon of garlic puree instead
- Swap chicken rub for 50ml of white wine
Then bag it and fridge it for later or silver foil it and then put it in the crockpot for dinner later. Because you are using garlic puree it is so fast that even if you have just 3 minutes for meal prep then this is just PERFECT.

What I love about my lemon chicken marinade is the marinating options. Don’t think that you just have to mix it in a bowl and then leave it on your fridge until dinner in the evening as you don’t have to. Here are 2 more of my favourite chicken marinade options:
No Washing Up Lemon Chicken Marinade
Now this is my personal best. If like me you hate washing up, then this is for YOU! When you marinade your lemon chicken instead do so inside the tray that you plan to cook the chicken in. Or even better, marinade your chicken over silver foil and then wrap up and seal your lemon chicken. Then cook it in the silver foil in the oven, crockpot, pressure cooker or even in the Airfryer.
Bag It & Freeze It Lemon Chicken Marinade
When you freeze lemon chicken in the middle of marinating it, it keeps its flavour a lot more. Simply marinade the lemon chicken in the bag, then freeze it in the bag and keep it for later.

Yes REALLY. Enough chicken marinated for feeding the 5 of us (of course it will be bumped up with pasta or potatoes). But even so a meal for the 5 of us for 5 cent each is AMAZING.
