I don’t know about you but when I first discovered the joys of eating Paleo there was a lot of food firsts.

For one I had very rarely had any coconut products and yet here I was having coconut oil on everything. The same went for coconut milk, coconut cream and OMG how do you live without coconut butter?

We already avoided quite a few processed food products, had a lot of vegetables in our diet and already ate eggs on a regular basis, so we didn’t really cut that much out.

It was more a case that we added things to our diet. Those avocados that we had never tried before and then there was honey.

I was ashamed to say that I had never tried honey until that moment. It was a moving in present from our next door neighbour and I couldn’t believe how much I liked it.

It was always something that I just didn’t like the idea of. But I was soon hooked.

Instead of getting my sugar kick from a huge tub of Ben & Jerry’s (well I am no saint so I still have some now and again) I was getting it from mixing honey with coconut milk and dark chocolate. It was like a dream come true.

But best of all I have discovered that savoury meals such as pork, carrots, salad dressings and even fish taste so much better with a bit of honey.

This recipe is what has happened when I have been let loose with lots of delicious baby carrots, my honey jar and my slow cooker.

  • Place the baby carrots in the slow cooker with the coconut oil and coconut butter and add the salt and pepper. Mix well and leave cooking on a medium heat.
  • After 2 hours add the rest of your seasoning, mix again and cook for a further 1 hour on low.
  • Serve.


If you can’t get baby carrots use large carrots, peel them and chop them into thirds.
