Welcome to my Paleo slow cooker chicken wrapped in bacon recipe.
I can’t remember the first time I ever tried chicken wrapped in bacon. It is just one of those foods that you have always eaten. This was a bit like having cheese sauce or pasta for the first time.
But what I do remember is that when we started losing weight it was one of those go to meals that we used to have in our steamer. It would usually involve some garlic soft cheese, lots of bacon and a big chicken breast each. We would then have it along with our favourite Airfryer French Fries and some vegetables.
It was heaven on a plate and we absolutely loved it!
But now that we do Paleo we will be avoiding the French Fries (probably choosing to have it with sweet potato ones) and will be ditching the cheese. One of the best things about Paleo is that there is always a Plan B. There is something else that you can have instead that is slightly healthier and you feel so much better for doing so.
Well my plan B is to have it with a lovely coconut filling with dried chives and garlic. Plus it will be made into silver foil packets and cooked in the slow cooker for making a healthy family meal with very little preparation.
Perfect for me as the new mum that has loads to do but is too tired to cook. Though if Kyle calls it “something weird with bacon on” one more time I am likely to put the parental lock on his phone until he is old enough to leave home!

In a large bowl mix together all your seasonings.
Place your chicken breasts on top of 2 silver foil sheets and sprinkle with salt and pepper.
Add your mixture from your bowl on top of your chicken breasts then wrap them in the bacon.
Seal your chicken packets and place in the slow cooker on a high setting.
Cook for 90 minutes, slice into chunky pieces and then serve.
I find that for the ultimate bacon experience that one bacon slice length wise and then one width wise works best.
