As kitchen gadget bloggers I find that we are often guilty of falling into a pattern of juice using certain gadgets. We end up living out of our slow cooker and air fryer and then neglecting the others that equally take up quite a lot of room in our kitchen.
One of those kitchen gadgets is our blender which we may add that we absolutely love. We got it at the beginning of last year and it is one of those professional looking ones that costs a small fortune that you see at trade shows.
Like most people we have of course made milkshakes and smoothies in it but over the last few months we have got a bit more adventurous with it and made a range of other things too.
This recipe is a classic example of that. We have made couscous in it. Its one of those one pot dishes that shouldn’t be overlooked as it is a touch of genius. You add your cooked vegetables and let the blender do the work, then you add the couscous and the boiling water, then 10 minutes later you have lunch!
So simple and is great if you want a quick lunch with not much preparation and perfect use out of your leftover vegetables that you have hanging around.

Place everything apart from the grated carrot and the couscous into the blender and whiz around until blended.
Add the couscous along with 2 cups of boiling water and mix without using the blender function. Leave a lid on the top for 10 minutes so that the couscous can cook.
Take the lid off, give it a quick stir and place into bowls.
Decorate with the grated carrot.
For the cooked vegetables you can use whatever you like but I love red peppers, carrots and broccoli as mine. But wet vegetables are the easiest i.e. cauliflower and courgette in case your blender isn’t that high duty.
