As I write about our Instant Pot Raspberry Jam No Pectin recipe, I am back in college on my summer work experience. It was a fun week and while everyone else was stacking shelves in the supermarket, we were at catering college.

I really didn’t need the work experience. I grew up with self employed parents and had a lot of summer jobs under my belt.

But going to catering college for the day sounded fun.

I loved the super-sized fridge that they had and the biggest collection of fresh strawberries that I had ever seen, that we were going to use to make homemade strawberry jam with looked amazing.

Since then, even though I had a great time, I have not made homemade jam since. That was back in 1998 and FINALLY I am reminiscing about jam making and learning that its so much easier and quicker to make raspberry jam without pectin in the Instant Pot Pressure Cooker.

Until I looked into to making raspberry jam in the Instant Pot, I didn’t know that people put pectin in their jam or that it was a thing.

But it seems that it is.

In my opinion, you would use pectin just like you would with corn flour in recipes. If the recipe fails to combine to the correct thickness, it’s a last minute add in, to save the recipe.

For a bit of fun and as a raspberry jam experiment, I did one jar of raspberry jam with pectin and one jar of raspberry jam without pectin. They stayed in the fridge together, had been cooked in identical ways and the result…… I really couldn’t tell any difference.

Cooking Raspberry Jam In The Instant Pot

Until you cook raspberry jam in the Instant Pot, you will not get what all the fuss is about. You throw the ingredients in and the Instant Pot does the hard work for you, in a lot LESS TIME than it takes in a traditional pan.

When the Instant Pot beeps, blend and watch as the creamy syrup goes super thick and you think to yourself that you have GOT THIS.

We also used our favourite mason jars for our raspberry jam along with a good ladle from our kitchen accessories pack to ladle the raspberry jam into the jars. We also recommend a good hand blender to finish the raspberry jam.

How To Cook Raspberry Jam With No Pectin

The great thing about making raspberry jam is that it doesn’t carry a lot of liquid. Unlike when you make a jam with a juicier fruit. Because there is less juice, it combines better, and you can cook your raspberry jam without pectin.

To make Raspberry Jam No Pectin it is as simple as throwing your ingredients into the Instant Pot:

  • Fresh Raspberries
  • Fresh Lemons
  • Sugar

That is it!

You can swap the ingredients depending on which sugar you wish to use, or swap raspberries for other fruits in the same family. For example, you could use this recipe as a Plan B when you have lots of strawberries in or use our Instant Pot Strawberry Jam recipe.

I have also had great success with combining strawberries and raspberries in the same round of jam. Just making sure that they always have the same amount of fruit. Otherwise your raspberry jam could turn out very different indeed.

Can You Freeze Raspberry Jam?

Absolutely! The first thing we did after allowing our raspberry jam to cool down overnight, was to take a few of the jam jars and place them in the freezer.

Well actually, that is not strictly true, there was some bread and butter going on with the raspberry jam smothered on top first!

On the day that we made our raspberry jam no pectin, we also made a good batch of our Instant Pot Strawberry Jam as well as some Instant Pot Peach Jam. We cooked all our Instant Pot jam on a Sunday afternoon, then the following morning placed the jam jars in the freezer for later.

  • Place into the Instant Pot your fresh raspberries, honey, caster sugar along with the rind and juice of one medium lemon.
  • Stir and place the lid on the Instant Pot. Set the valve to sealing and cook for 2 minutes on manual.
  • Use natural pressure release for a further 10 minutes and then manually release pressure.
  • Stir and using a blender, blend about 75% of the raspberry syrup.
  • Using a ladle, add the raspberry jam to your sterilised mason jars.
  • Place the lids on the jars of raspberry jam and place in the fridge for at least 12 hours.
  • To freeze wait at least 12 hours for the raspberry jam to fully cool down.

Notes

This raspberry jam no pectin recipe, will make enough for 2 large mason jars and one small, or 3-4 medium mason jars. Always make sure that you sterilise the jam jars prior to using them.
The 10-minute natural pressure release is an important step. If you don’t you will have a hot syrup kitchen explosion to worry about. You don’t need to add an extra liquid to the Instant Pot because the raspberries and the lemon juice produce enough liquid.
