Soup Maker Leftover Soup

Welcome to my roast dinner leftover soup via the soup maker machine.

I don’t know about you but at Christmas we had loads left over.

With us being a family of four (now five) and not being big eaters, we knew that there was going to be plenty left the next day.

We had loads of leftover turkey (not that we wasted it all in the soup machine), loads of leftover vegetables, spare roast potatoes and don’t get me started about all the pigs in blankets and stuffing balls we had left.

On Boxing Day, it is all about the burgers and the soup. We will have Boxing Day Soup which is what this recipe is, as well as a turkey burger version such as our Air Fryer Turkey Burgers, and then the day after this we are making casseroles and stews and filling the freezer with turkey leftovers.

I must admit I purposely buy more Christmas food, just so that I can make lots of leftover meals as I adore roast dinner leftovers.

Many people have written to us and told us how much they have loved our leftover soup and it originally happened by accident at Christmas 2015.

Back then our beautiful daughter Sofia was just over a year old and fussy like many little girls that are been weaned off milk and onto solids.

But Sofia did adore soup, (and still does) so I had got into the habit of making her leftover soup frequently.

Xmas 2015 night arrived and after eating our Christmas dinner, I made some of the leftovers into baby food for her. I had a quick try and thought it was the most delicious leftover soup.

I was gutted that I wouldn’t get to eat it all myself.

Dominic agreed and since then it has become a Boxing Day tradition to eat our Christmas roast dinner leftovers as a Boxing Day Soup!

I have since played about with the ingredients a bit to see what else I could do with it and this is how our roast dinner leftover soup has come together.

We have a roast dinner once a week in the winter months and we always make a leftover roast dinner soup. You could do the same and apply the same principle when you are cooking at it’s a great way to get through your leftovers.

Though do note, don’t buy in extra ingredients just to make our roast dinner leftover soup, instead base it on what you have in, and mix and match based on your pantry staples.

Making Soup With Leftover Roast Dinner

It is so easy to make soup with your leftover roast dinner. It is a case of gathering your ingredients and throwing them into your soup maker.

Then the soup maker can work on 2 tasks:

  • It can firstly warm your ingredients back up so that you are not left with cold soup.
  • Then secondly it can blend your soup so that you don’t have huge lumps of vegetables and the other ingredients you have leftover.

If you don’t have a soup maker, you can heat your soup up on the stove and then use a hand blender to blend into a smooth yummy leftover soup.

Once you have your ingredients planned out you can load them into your soup maker, add some extra liquid and 10 minutes later come back to perfect leftover soup.

Though I should also mention that some of the bigger pieces of leftovers will need breaking down before you make the soup.

We find this is essential for:

  • Yorkshire Puddings
  • Turkey
  • Roast Potatoes

Though this will of course depend on the ingredients you are adding to your soup maker roast dinner soup.

Leftover Roast Dinner Soup Ingredients

This leads me to the ingredients that we typically use in our roast dinner soup.

It is normally a mixture of the following:

  • Leftover Veg
  • Leftover Turkey or Chicken
  • Leftover Yorkshire Puddings
  • Leftover Cauliflower Cheese
  • Leftover Gravy
  • Leftover Turkey Stuffing
  • Leftover Roast Potatoes
  • Leftover Mash
  • Leftover Parsnips

Though this can work with similar roast dinner leftovers. Though it is tastes best if you have some sort of leftover gratin. Whether this is cauliflower cheese, broccoli gratin or macaroni cheese.

It is also better if you have some type of leftover potato as this thickens the leftover soup, just like leftover gravy adds depth of flavour.

Instructions

  • Chop everything into medium chunks so that everything will cook evenly, especially if you have some large chunks of vegetables or if the roast potatoes are too big.
  • Add the leftovers into the soup maker and add 150ml of water.
  • Add the seasonings and place the lid on the soup maker. Set the soup to blended soup for 10 minutes.
  • It only needs to be on for a short time as the ingredients are already cooked and they mainly need heating up and blending.
  • Serve with some warm crusty bread.

Notes

These are the exact leftovers that we used in our leftover soup but they can be changed to save on your food waste. It is also a great way to get vegetables into those that hate veg such as your teenagers!
You can also make this soup and then freeze it for later, a great way to enjoy your roast dinner a few months from now.

  1. Hi, could you tell me how you set your soup maker for just 10 minutes to do the roast dinner soup in a soup maker because mine is on for 21 minutes when you blend a soup and 29 minutes if you have it chunky. Thanks.

    • Hi Sharon,

      On some soup makers they have a time on them and are not an auto set.

      What I do is use a kitchen timer and shut it down and cancel it after 10 minutes when using the Morphy Richards and then hit the blender button.
