Welcome to my slow cooked pulled turkey Mexican tacos recipe.
I have always loved Mexican food. The lovely heat, the lovely flavours and most of all because most Mexican cuisine falls under the comfort food tag.
At this time of the year I love nothing more than wearing Dominic’s fleeces, watching movies and eating all the comfort food I can get my hands on. I don’t know why but I always think of spicy food when it comes to comforting food rather than traditional old school style meals such as stew and dumplings.
But even though I have this opinion it hasn’t always been shared by Dominic. He is one of these that hates spicy food and would much rather eat a Shepherds Pie rather than a Mexican casserole.
I really didn’t know this when I first moved in with him in 2000. My mum was having a dinner party and was having a Mexican themed evening. She had made nachos, a Mexican lasagne and a few other sides too. I took some home and heated it up for him for when he came home from work.
I didn’t quite get the reaction I wanted and since then I have had to tone down the spices in his food. This recipe is a key example of this. Mexican food for the light weights. For those of you out there that do like some spice on their food but like to enjoy it at the same time.
This is also another great turkey recipe for getting rid of your Christmas & Thanksgiving leftovers and for filling up your wraps with something delicious that will not feel like you are eating the poor part of the turkey.

Place your brown turkey meat into the slow cooker along with everything apart from the cheese and the wraps.
Mix well and cook on a low heat for 90 minutes.
Serve inside warm homemade tortilla wraps (tacos) with feta cheese and fresh coriander.
You can also swap the coconut milk for soft cheese and it will give it a lovely creamy texture and is particularly good if you love cheese.
