Soup Maker creamy Portuguese Green Bean & Carrot Soup. Also known in Portuguese as Sopa Feijao Verde Com Cenoura.
Here I am with number 5 of 5 in our 5-part international recipe series and I have got out the soup maker. Its been a while since I blogged about my Morphy Richards Soup Maker and that is because I rarely use it these days.
I like to think that RecipeThis.com is a good reflection of the kitchen gadgets that we use on a daily basis. You will see majority recipes that are made in the Instant Pot Pressure Cooker and the Philips Air Fryer and this is because we use these every day. After that we use our blender, slow cooker, and bread maker a lot. Then the other gadgets as and when we are in the mood for them.
The soup maker has passed us by because we have outgrown it. It is perfect for a single person that is on Slimming World and wants to make a couple of bowls of soup a day for themselves, or a couple that want a bowl of soup each for lunch.
But beyond that its simply too small.
We’re a family of 5 and when we make soup as a family we tend to use the Instant Pot and then we can have a big batch of soup ready for us in 6 minutes, rather than waiting 28 minutes for the soup maker.
But with us having lots of soup maker readers, we decided to make Portuguese Green Bean & Carrot Soup in the soup maker for a pleasant change and I tell you what, it was delicious and so easy to make.
Plus, as Kyle was at school it was a perfection portion for us.
We also PROMISE to make an effort this winter and to get our Morphy Richards Soup Maker out more often!
Soup Maker Portuguese Green Bean & Carrot Soup
After showing you around Europe in our international feature, it was a tough choice between finishing day 5 in Spain or in Portugal. Well our home country WON and we are sharing with you, what I consider to be the best soup of Portugal and that is the classic green bean and carrot soup.
When you first see the Portuguese green bean and carrot soup, you expect it to be bright orange because of the carrots but the green beans rule and it has a beautiful green colour, similar to the look of broccoli soup.
I absolutely adore Portuguese soup and get excited about starting a meal with a big bowl of soup along with some rustic Mediterranean bread. 90% of the neighbours in the village I live in are over the age of 80. They are all a lot fitter than me and never stop moving and eat a lot of soup. So maybe that is a warning to us Brits that the Mediterranean way of life is the BEST.
The pack that we bought was 400g and had the green beans and the carrot already thinly diced. You could throw the vegetables straight into the soup maker and have lunch done in no time.
Of course, we love our homemade bread with our soup maker recipes, therefore we started with putting some fresh bread on in the bread maker. Though I doubt that fits in with Paleo or Slimming World???
After adding the green beans and the carrots to the soup maker, in goes vegetable stock, salt, pepper, parsley and the soup maker lid is sealed into place. Then place it onto the chunky soup mode and cook it for 28 minutes.
Once it is cooked lift the lid and see how much liquid is left. If it needs more liquid, then add it and the blend until smooth.Soup Maker Portuguese Green Bean & Carrot Soup @recipe_thisClick To Tweet
- Place the green beans and the carrots into the soup maker.
- Add all the other ingredients.
- Place the lid on the soup maker and set to chunky soup.
- Cook for 28 minutes.
- Add extra liquid if necessary and then blend until smooth.
There is always a terrific choice in supermarkets of prepared soup packs. I recommend you make a soup with one of these as its so simple and you can get some real bargains. I got mine from a clearance lot for 1,71€ a pack. For vegetable stock a vegetable OXO cube is fantastic or use a healthy broth.
