Sous Vide Sirloin Steak

Today I am going to show you how to make perfect sous vide sirloin steak. The sirloin steaks are cut to nearly equal sizes, seasoned lightly with salt and pepper, cooked in a water bath and then seared on a steak stone.

But first let me tell you a bit about the back story of us Milners and steak. You see we have had years and years of practice.

Well Dominic has.

Many years ago, he worked as a chef and in one of the restaurants he worked at his speciality was cooking steak for his regular steak loving customers. They would come into the restaurant for Dominic’s steak as it was amazing. The head chef never liked it that his junior chef at the time, got more thumbs up for the sirloin steak than he did.

I could never imagine how many steaks Dominic cooked, but it was one of those foods that you can ask him anything about and he will know the answer.

He was about 20 years old when he worked there, and it was early on in his cooking career. He served steak in many other places both before and after that job.

Then around the time we got married he worked at a great place where we could get discounted sirloin steak and bring it home. We were on a low income, but we had more steak than we could eat. You would have thought we were on the steak diet.

We made a fantastic double team and Dominic would cook the steak. It had to be a perfect well done for me and a medium for him. It was during my phase of hating blood in my red meat. Yet now I adore medium sirloin.

While Dominic cooked the sirloin steak, me and Kyle (he was a toddler back then) made the delicious creamy sauce to go with it. I hadn’t learnt how to make a healthy sauce back then, so I am sure it involved single cream and a huge amount of cheese and maybe some fried onions.

It was delicious and since then that is how we cook sirloin steak. Dominic cooks the steak and I make the potatoes and the sauce. The perfect steak partnership.

When I suggested to Dominic that we hadn’t made Sous Vide Sirloin Steak, yet he was all up for the challenge.

Sous Vide Sirloin Steak For Beginners

If you’ve been following along for the last few Mondays, you will know that we are dedicating each Monday for an entire year to the Sous Vide cooking process. Today as I type this, we are on week #14 and it has been a wonderful experience letting you watch over our shoulder as we learn all about the Sous Vide.

We don’t all have an amazing steak chef at home like I have Dominic and we felt that cooking sous vide sirloin steak is a great way for our readers to get into cooking their own perfect sirloin steak.

You don’t have to worry that your steak is going to be overcooked or undercooked as you have the perfect temperature for medium from us, that way you can get it spot on.

How To Sous Vide Sirloin Steak?

Sous Vide Sirloin Steak is the BEST.  From my prospective it is because it is so EASY. No worrying that your steak is not cooked how you want it and you can just bag it up and let the precision cooker do the magic for YOU.

I would compare cooking sous vide sirloin steak to foil packet dinners. That is because you are quickly seasoning your food, sealing it and then coming back to it later. There is hardly any washing up and it is all about deciding how you’re going to serve your sirloin steak!

Sous Vide Sirloin Steak Is Like This:

  • Season with salt and pepper
  • Bag it up and seal it
  • Cook your sirloin steak in the water bath once it hits temperature
  • Cook for an hour
  • Sear for a bit of extra flavour
  • Add sides and serve
  • That is it. It really is that simple to cook sirloin steak in the Sous Vide!

The first time we cooked sirloin steak in the sous vide, it made us realise why people are buying precision cookers for their kitchens just for steak. It is spectacular.

Sous Vide Sirloin Steak Temp?

We cooked our Sous Vide Sirloin Steak for 1 hour at 54 Celsius. This resulted in a perfect medium sirloin steak. If your steak is a little frozen and not fully thawed, then you can increase the time to 1hr20 for the same result.

Sous Vide 8oz Sirloin

There is always the question of what size sirloin steak you should cook in the sous vide. My favourite sirloin steak size is 6oz anything over that and I can’t finish it. Just like when we were in America Dominic and I shared a 12oz with Kyle as it was just too big. However, in my opinion the most common size is an 8oz sirloin and that is why we have gone with 8oz.

Or buy it from the butchers and its not quite the right size so we have one sirloin steak that is 7oz and one that is almost 8oz.

Sirloin Steak On The Stone

The steak on the stone is an amazing experience for when you cook steak at home. We first tried steak on the stone just after moving to Portugal and it was on Dominic’s birthday. It was September 2008, so we are going back a few years now. But we have enjoyed it many times over the years.

Think pizza stone but for steak and you can finish the searing process on the stone, and it gives it an amazing smokey flavour when cooked. In our video we have shown it in action!

Plus, it is a great way for keeping your steak warm or crisping up your potatoes.

Instructions

  • Season your sirloin steaks with salt and pepper. Place the sirloin steaks inside vacuum bags and seal them with your sealing machine.
  • Preheat your water bath to 54c/129.2f and place your steaks into the bath.
  • Cook for an hour and then remove your sirloin steaks with tongs.
  • While your steak is cooking in the sous vide warm up your steak stone and plan what sauces and sides you plan to have with your sirloin steak.
  • When the steak is cooked place them on the steak stone with a little extra salt and pepper. Sear it for a couple of minutes and serve with your favourite sides.

Notes

If you don’t have a steak stone this is the one we have. They make having steak such a special event and we have 3 of them in our kitchen.
The sirloin steaks we cooked were 7oz and 8oz.
