Welcome to my latest recipe and this is my first of five this week featuring Slimming World recipes in the slow cooker. We are starting it today with my Syn Free Slimming World Carrot Risotto. Cooked to perfection in the slow cooker it is perfect for using for a variety of dishes especially for SP days.
Do you sometimes have this act of genius? When you have this amazing idea and it kind of just works even though it was on the spare of the moment and you never ever planned on it happening?
Well this is exactly what happened with this carrot risotto. I fancied something different I was sick to death of pasta and rice (aren’t most people on Slimming World after a few weeks at it) and wanted something really interesting that I could use over and over again.
So I got bored one day with my food processor and ended up making this dish. It was so easy and shockingly simple and makes you realise that the food processor can have a use. Then follow it up with the slow cooker and you have a dream kitchen gadget dish.
It also give me another great idea….and that is to follow the same recipe as this but to do it will grated carrot and have it as a fake tagliatelle.
You could also do the same with all kinds of vegetables including turnip, swede, parsnips, courgette or even potatoes. As the ideas are simply endless.
It is also a great way to use up all your leftover vegetables or to have a new way to have a speed foods day.
Or how about when you are on a Slimming World SP Day?
You could have this with some chicken breast that you have baked in the oven, or add some chicken breast to the dish as you cook it in your slow cooker.
Also the main reason for making it in the slow cooker, is that you don’t need to mess about with fry light or oils and you can throw everything in straight away and it can be completely fat free.
Or change that chicken for something else you fancy. How about:
- White Fish
Or you could of course just load it up with more vegetables. Basically, it can be your blank canvas for a healthy slow cooker meal while on Slimming World. And by using cheese from your allowances it is very easy to keep it Syn Free.

Chop your carrots into bite sized pieces and place them in your food processor. When it resembles grains of rice place it into your slow cooker.
In your slow cooker add the rest of your ingredients to the carrot rice and mix well.
Place it on high for 3 hours and then serve.
I used light Philadelphia for my soft cheese that way it could be used as part of a healthy Extra A. Plus as this dish is for 2 it can be counted as ½ a healthy extra A.
