Slimming World Spicy Vegetable Rice In The Slow Cooker

I love rice. I love spicy rice from Nandos, pilau rice with Indian food, jasmine rice with Thai food and don’t get me started about my love for a creamy rice pudding.

But it wasn’t until recently that I discovered just how DELICIOUS and how SIMPLE it is to make rice in the slow cooker. You could make any rice dish you love in the slow cooker, dump and go and then return later to fluffy yummy rice.

Also, if you are one of those when rice always goes wrong, then the slow cooker is doing all the hard work for you.

You could make a big rice meal in the slow cooker, especially if you’re saving money or do it the way I do it:

My way is that I always have a tonne of leftover curries in the freezer. I will have a curry cooking from frozen in the oven, then at the same time make Slimming World Rice in the slow cooker.

It’s a great organisation technique and saves you spending hours in the kitchen, having to cook lots of different things at once. Then of course, when I originally made my Slimming World curry, it would have been made in the slow cooker and then bulk freeze for later.

But it gets better, the average helping of rice is perfect for feeding 4 people and you can bulk up your meal. So if money is tight, then making a bigger portion of spicy vegetable rice can go a long, long way.

Syn Free Slimming World Spicy Vegetable Rice

To make Syn Free Slimming World Spicy Vegetable Rice is so EASY. You load up the slow cooker with whatever vegetables that you like. For our version of spicy rice, we used thinly diced courgettes and plenty of red onion and frozen peas.

As well as this you add thinly diced garlic and ginger.

Load it up with 2 cups of basmati rice as well as 4 cups of warm water or stock.

Add to it your seasonings of choice and after a slow cooking period you have an amazing fluffy spicy rice dish.

Ingredients
  • Slow Cooker
  • Measuring Cups
  • 2 Cups Basmati Rice
  • 1 Red Onion
  • 50 g Courgette
  • 4 Medium Garlic Cloves
  • 1 Cm Cube Ginger
  • Handful Frozen Peas
  • 1 Tbsp Cumin
  • 1 Tbsp Garam Masala
  • 2 Tsp Tumeric
  • Pinch Chilli Powder
Metric - Imperial
Instructions
  1. Peel and thinly dice your garlic, red onion and ginger and place it in the bottom of your slow cooker on low.
  2. Thinly dice the courgette and add this too.
  3. Add your frozen peas.
  4. Add 2 cups of Basmati Rice along with 4 cups of liquid.
  5. Add in the seasonings, stir and place the lid on the slow cooker.
  6. Cook on low for 2 hours and 20 minutes or high for 1 hour 15 minutes.
  7. Stir well until its nicely fluffed up.
Recipe Notes

Because of the way the basmati rice cooks in the slow cooker, you don’t need to rinse it first like you do when you boil it. If you want more heat on your spicy vegetable rice (I was feeding a curry loving 3-year-old) then add a more chilli powder or increase the ginger. I use a set of measuring cups to make rice with as it makes it so much easier.

 

Then always remember that the liquid is double the rice. I.e. 1 cup of rice = 2 cups of liquid and so on. If not using a measuring cup use a measuring jug and 1 cup is the same as 250ml. For liquid we just used tap water. You could use stock or watered-down curry paste. But because of the other flavours going on, we didn’t feel like it needed it.
