I am trying to think hard and trying to remember the first time I ever had extra virgin coconut oil and I can’t. It is one of those products that sits there in my pantry and whenever I need to cook with my extra virgin coconut oil, then I do.

What Is Extra Virgin Coconut Oil?
Extra Virgin Olive Oil (or copra oil as it is also known) is a specialist oil that is extracted from the meaty part of the coconut, once it has matured to between 2 and 20 months. Because of its high saturated fat content, it can be kept and will not spoil for 6 months, as long as it doesn’t go above temperatures of 25°C/75°F.
Even though it has high levels of saturated fat, it is good fats and therefore should replace vegetable oil within a balanced diet.
Extra Virgin Coconut Oil is made by the meaty part of the coconut oil being removed from the shell and then dried out using sunlight. It is then pressed and dissolved producing the extra virgin coconut oil that we all know and love.
To achieve the BEST EVER extra virgin coconut oil then you need to use the more mature of the coconuts. It is highly recommended that a coconut should be at least a year old for the best results. Though the most premium coconut oil that you buy will be from coconuts that are between 18-20 months in maturity.
Extra Virgin Coconut Oil is associated with being produced from either fresh coconut milk, the coconut meat or even from fresh coconut residue. Another way to make extra virgin coconut oil is by grating it from the fresh meat of the coconut. Or just like in classic cooking by using a manual press.
The difference between coconut oil and coconut milk is simply that water is added to the coconut milk and then the oil is extracted out of the mixture.

I have only ever had a flu vaccine once in my life and that was because it was forced on us when we started university and since then (it was 2004) I have never had the flu, probably get a cold once every 3-4 years and overall have good health.
On a side note – Should I mention now that my husband and eldest son have had a terrible cold recently that they have had for 3 weeks and even though I have been in their company all the time, I have not had any signs of it at all.
