Slimming World Frittata Pizza

Syn Free Slimming World Frittata Pizza. Easy to make, great for vegetable boost and perfect for if you have spare cheese and are craving a pizza. Or if you have kids that hate their vegetables then feed them this, I guarantee they will love it!

  • Place your pizza dough ball into a bowl and mix it with an egg, salt, pepper and oregano. Bind it together so that you have a soft pizza dough ball.
  • Place it onto your pizza tray and using your hands, push it down until it covers your pizza tray and is not too thin and not too thick.
  • Add your grated cheese layer, a layer of sliced tomatoes, your ½ teaspoons of soft cheese, salt and pepper and a sprinkling of basil.
  • Cook in the oven for 30 minutes at 180c/360f.
  • Serve warm.

Notes

I used a mixture of broccoli, carrots, cauliflower and sweet potatoes to make my Slimming World Frittata Pizza Base. When you measured it, it worked out at a huge pizza dough ball (see the image further up) and we used the equivalent of a large broccoli, a large cauliflower, a handful of carrots and 2 large sweet potatoes.
 
We then cooked them in our Instant Pot until they were mushy. We then mashed them and after this placed them in a clean pillow case, ringed out the excess water until it was like a firm dough ball. I love soft cheese on my pizza. I first had it like that at Pizza Hut and the cheese tastes amazing like that.
 
I just use ½ a teaspoon lumps of cheese until I have used up my 75g allowance. I always make sure I add extra salt to the sliced tomatoes as tomatoes always need their salt!
