Instructions

  • Place the frozen chicken breasts into the bottom of your Instant Pot inner pot.
  • Pour 250ml of boiling water over the chicken breasts as this will loosen them up and start the cooking process and also reduce the chances of dry chicken.
  • Pour the tinned tomatoes on top and season the top with salt and pepper.
  • Place the lid on the Instant Pot and set the valve to sealing.
  • Cook for 45 minutes on the poultry setting.
  • When it beeps, use quick pressure release and remove the lid and make sure the chicken is cooked.
  • Season as you wish and then serve.

Notes

I used 2 medium cans of tinned tomatoes which worked out at a combined weight of 800g. Remember this frozen chicken recipe is based upon 1 kilo of frozen chicken breasts stuck together. Most people will cook a lot less than this and that is why it will take you 45 minutes to cook.

Think of it as 5 large chicken breasts. If you are just doing 4 chicken breasts that are NOT attached, then 25 minutes would be a good cooking time. Normally if I am cooking with thawed chicken breasts I will use just one can of tinned tomatoes and no other liquid, but to stop the chicken from being dry you need extra liquid. Also, don’t use natural pressure release as it will dry out the chicken.
