Instructions

  • Weigh out the butter and flour into a mixing bowl and rub the fat into the flour. Keep doing this until it resembles coarse breadcrumbs.
  • Pour in the buttermilk and using a fork mix well.
  • Flour your hands and then using your hands make the mixture into a dough ball.
  • Roll out the dough and using the biscuit cutters make into 16 medium sized flaky biscuits.
  • Cook at the rate of four at a time in the air fryer via the grill pan, making sure you don’t have them touching and that they are NOT over crowded.
  • Cook each set of 4 for 8 minutes at 180c/360f.
  • Serve warm.

Notes

I made 16 flaky buttermilk biscuits with the recipe above. If you just need 8 then half the recipe. Size matters – we don’t like super tall biscuits, but you went really tall then it would make a batch of 12 instead. If the dough is too wet add a little bit more flour and if it is too dry add a little bit extra buttermilk.

Before I cooked the flaky biscuits in the air fryer I added a little egg wash to the top and sides. You could also do the same but with melted butter. If you can always use self raising flour. It makes cooking so much easier and you can use a lot less ingredients. I always have plenty in the cupboard for when I am baking.

I recommend that you use a grill pan in your air fryer. It is perfect for baking and stops them sticking to the air fryer basket. Or another plan B is to use a baking mat that you have had cut to size. To make our air fryer flaky buttermilk biscuits we used this brand of biscuit cutters.
