Air Fryer Rock Buns
Easy and quick air fryer rock buns. Just like how grandma used to cook them. Loaded with raisins this classic baking treat is a keeper.

Place the flour, sugar and butter into a mixing bowl and rub the fat into the flour.
Add the raisins and honey.
Using a good grater add the lemon and orange rind. Chop them both in half and squeeze the juice from them both into the bowl too.
Using a fork give it a good mix.
Crack the egg in and mix it again.
Add milk a little bit at a time until you have a soft dough.
Make the dough into small to medium sized scone shapes.
Place in the air fryer inside the grill pan and cook at 180c/360f for 10 minutes.
You can do little or large scone sizes. We went with small to medium and this made us 8 rock buns. If you can use a good quality citrus zester. Otherwise you could be a bloody mess! We find the way to make the least amount of mess baking in the air fryer is to either use a baking mat that fits onto your air fryer basket or to get an air fryer grill pan.
