  1. Peel and dice the potatoes, the carrots and the onion.
  2. Place them into the bottom of your Instant Pot and add 375ml/1.5 cups of beef stock.
  3. Place the lid on the Instant Pot, set the valve to sealing and cook for 7 minutes on manual pressure.
  4. When it beeps, quickly release pressure and open the Instant Pot. Add seasoning, dice the corned beef and add it to your pot. Mix it well with a wooden spoon on the sauté setting for 2 minutes, or until the corned beef is warm and well mixed.
  5. Serve while it’s still warm.
Recipe Notes

I chop the potatoes, corned beef into the same medium sized chunks. The carrots are better as tiny cubes, as is the carrots, so that everything is well cooked and you don’t have crunchy carrots syndrome.


For the stock we used this one. It gives so much more flavour compared to a cheap stock cube. Though you can use either.
