Ingredients

Recipe Ingredients:

  • 500 g Baby Carrots peeled and washed
  • 1 Tbsp Honey
  • 1 Tsp Olive Oil
  • Salt & Pepper

Instructions

  • Place 1 cup of water into the bottom of the Instant Pot inner pot.
  • Add the trivet/steamer shelf and place your steamer basket on top.
  • Add your baby carrots to the steamer basket and season them with salt.
  • Place the lid on the Instant Pot, set the valve to sealing and cook for 0 minutes.
  • While it pressure cooks mix together the honey, salt and pepper and olive oil.
  • Manually release pressure when it beeps and load your baby carrots into the marinade bowl and mix well.
  • Serve warm or cold.

Notes

If your honey is really thick, I recommend adding in a teaspoon of cold water to help it mix better or extra olive oil. You can go oil free and replace it with water. I always use bags of carrots that have already been peeled.
The steamer basket we recommend is this one, as it expands depending on how much veg you have to cook. We either use this one or our old one from a soup machine we used to own. If you don’t like honey you can swap it for brown sugar or an organic maple syrup.
