Instant Pot & Air Fryer Mexican Street Corn. Mexican Street Corn steamed first in the Instant Pot Pressure Cooker, then made crispy and flavoursome in the Philips Air Fryer. Mexican Street Corn just got easier, thanks to the use of my 2 favourite kitchen gadgets.

  • Place your trivet into your Instant Pot inner pot and add 1 cup of water to it. Rest the corn on the cob on top of the trivet and add the butter on top of the corn. Cook for 3 minutes on manual and when it beeps manually release pressure.
  • While the corn is under pressure mix together your marinade ingredients until it is like flavoured soft cheese.
  • Place the steamed corn on the cob into the air fryer and sit it on the grill pan. Load a quarter of the marinade on top of the corn and cook for 7 minutes at 200c/400f in the air fryer.
  • Serve with the rest of the marinade.

Notes

You can use whatever yoghurt you prefer. I used full fat Greek yoghurt and it was delicious.
