Air Fryer Roasted Mediterranean Vegetables. If you would like to cook the best of the Mediterranean vegetables in the air fryer then this is it! Loaded with courgette, mixed peppers, onion, garlic and cherry tomatoes.

  • 450 g Medley Mediterranean Vegetables

Instructions

  • Remove all freezer packaging and place the vegetables onto the air fryer grill pan. Transfer the grill pan to the air fryer.
  • Cook for 3 minutes at 200c/400f, followed by a further 5 minutes at 160c/320f.

Notes

It is assumed that your frozen Mediterranean vegetables have already been tossed in olive oil. If they have not, add a tablespoon of extra virgin olive oil and toss it in the vegetables before cooking. We use an air fryer grill pan for this air fryer recipe. It gives your air fryer vegetables that grilled look and stops overcrowding and too much oil.
