Season your sirloin steaks with salt and pepper. Place the sirloin steaks inside vacuum bags and seal them with your sealing machine.
Preheat your water bath to 54c/129.2f and place your steaks into the bath.
Cook for an hour and then remove your sirloin steaks with tongs.
While your steak is cooking in the sous vide warm up your steak stone and plan what sauces and sides you plan to have with your sirloin steak.
When the steak is cooked place them on the steak stone with a little extra salt and pepper. Sear it for a couple of minutes and serve with your favourite sides.

The sirloin steaks we cooked were 7oz and 8oz.
