Slow Cooker Gammon In Coke

Ingredients

  • 2.3 kg Gammon Joint
  • 2 L Diet Coke
  • 1 Medium Onion
  • 1 Tbsp Chopped Garlic
  • 180 g Brown Sugar

Instructions

  • Pour into the slow cooker your brown sugar followed by your diet coke. Add in the garlic and mix well.

  • Peel and dice your onion and add to the slow cooker.

  • Submerge your gammon joint in the liquid so that it is ¾ covered.

  • Slow cook your gammon in cola for 4 hours on high or 7 hours on low. Or add an extra hour if you would like pulled gammon. Then remove the gammon from the slow cooker, allow it to rest for 10 minutes before slicing and serving.

Notes

Garlic. One of my favourite kitchen hacks is frozen chopped garlic. I buy it from the supermarket and then just grab a little as I need it.
Salt. Gammon, like virginia ham is very high salt. By being submerged in cola it gets the salt out of the gammon and that is also why you don’t need to add extra salt to the recipe.
