Healthy Slow Cooker Tomato Sauce. A delicious healthy slow cooker tomato sauce made with fresh tomatoes and seasonal vegetables. The perfect dump and start slow cooker fresh tomato pasta sauce, that is freezer friendly and ideal for leftover fresh tomatoes.
Prep your vegetables for your tomato sauce. Dice and remove the cores from your tomatoes, slice and dice the zucchini and peel and dice your parsnips and sweet potatoes.
Load the ingredients to the slow cooker, add in the seasoning, the garlic puree and mix well with your hands.
Cook on slow in the slow cooker. 4 hours on high or 7 hours on low.
Blend the slow cooker ingredients. Add in the other ingredients and blend some more. You now have perfectly creamy healthy slow cooker tomato sauce.
Notes
Remember to wait until it is cool before you put the healthy tomato sauce into the freezer. I leave mine on the side without lids on until it has cooled.If you want a richer healthy tomato sauce, then I recommend adding in 150ml of red wine at the same time as adding the vegetables.You can replace garlic puree with thinly grated fresh garlic if you prefer.
