Airfryer Butterless Strawberry Sugar Cookies

Strawberry sugar cookies made with olive oil and coconut oil instead of traditional butter. Perfect for a sugar fix when you are out of butter.

  • Preheat the Airfryer to 180c/356f.
  • Clean the strawberries.
  • Place the sugars and the oils into a mixing bowl and mix until smooth and creamy with a hand mixer.
  • Add the honey, the vanilla essence, eggs and give another whizz with the hand mixer so that the eggs are well beaten into the cookie batter.
  • Using a fork mix in (a bit at a time) the flour and the oats. Until the cookie batter is well combined.
  • Add the strawberries and mix them into the batter with your hands.
  • Spoon in the cookie dough onto the Airfryer baking pan until you have 6 cookie dough balls.
  • Cook for 12 minutes at 180c/356f.
  • When they are cooked move them to a cooling rack and then do the same again with the rest of the dough until you have 12 strawberry sugar cookies.
  • Serve.

Notes

I have used cups in this recipe. Just because for this recipe to work the measurements don’t have to be perfect, like they do with other baking recipes. If you don’t work with cups here is a converter.
Because you are using self raising flour it means that you only need small cookie balls as they will expand as they cook.
