Slimming World Falafel Recipe

The vegan Greek classic falafels have often been considered as a super food. These vegan burgers feature chickpeas, red onion and plenty of seasoning. So quick to make and perfect for a Greek Fakeaway.

Ingredients

Instructions

  • Drain the chickpeas.
  • Place the chickpeas and the gluten free oats into the blender and blitz along with the seasonings.
  • Peel and dice the red onion.
  • Place the blender mixture, the red onion, garlic and the juice from the lemon into a mixing bowl.
  • Mix with your hands and form meatball shapes.
  • Place them in the fridge for 30 minutes to harden.
  • Cook inside the Airfryer via the baking pan for 8 minutes at 180c/356f.

Notes

As an alternative option you can add 100g/3.5oz of beef mince to it for a meaty falafel version. I also like to use a traditional koftas recipe and then add in some hummus for a more Greek flavouring.
If the mixture is too soggy then add some extra gluten free oats in order to bind it better.
