Peel and cut up your potatoes into chunky chips. Season with salt and pepper. Splash with a little olive oil. Cook for 5 minutes in the Airfryer at 180c/356f.
Rinse the prawns and then pat them dry with kitchen towel. Place them on your chopping board.
From above season your prawns with salt and pepper.
Place the egg in a small bowl and mix with a fork until it is the egg is beaten.
In the blender add your seasoning along with 80% of your gluten free oats. Blend until it resembles coarse breadcrumbs. Place it into a medium sized mixing bowl.
Then put the leftover gluten free oats that have not been blended into a third bowl.
Place your prawns into the blended oats first, then the egg, then in the blended oats again and finally in the non-blended oats.
Remove the chips from the Airfryer and add them to the grill pan
Rest the prawns in the Airfryer in the grill pan and cook for 10 minutes at 180c/356f.
When cooked season with fresh lemon juice and serve.
Thyme is not traditionally in scampi but it makes it taste so good and gives it a delicious European flavour.
I used one big 500g/17oz bag of uncooked king prawns. Of course you can increase or decrease depending on how many you want to make.
The non-blended oats give a lovely finish as it keeps the scampi crispy and deals with any of the oats that have fallen.
