Strawberry And Cream Crepes

  • In a mixing bowl add together the egg, vanilla essence and the stevia and mix with a fork until you have a light batter.
  • Spoon the mixture into a frying pan over a medium heat cooking 1 at a time. Cook each of them for 1 minute on each side. Remember this mixture is enough for 8 crepes so make sure you don’t add too much batter at once.
  • In a blender add all the ingredients (apart from the strawberries) for your filling. Blend until creamy and smooth.
  • As you cook the crepes fill them with the creamy blender mixture along with some sliced strawberries.
  • Serve while still warm.

Notes

The general rule is that 1 egg = 2 crepes and that for feeding four people to aim for 4 eggs = an egg per person.
Aim for a medium heated pan rather than a really hot one. This is because this strawberry and cream crepes are free of oil and contain stevia is the actual crepe mixture and otherwise they will stick to the pan and burn.
