  • Thinly slice up the fresh mint.
  • Slice the aubergines into medium slices. Place them onto a clean work surface. From above sprinkle them on all sides with salt, pepper, fresh mint, basil and oregano. Place the olive oil into the palm of your hand and rub the aubergines into your hands so that each piece becomes sticky.
  • Then place them in the Airfryer and cook for 8 minutes at 180c/356f.
  • Give them a shake and sprinkle them in your breadcrumbs. Season with a little bit more salt and pepper and then cook for a further 4 minutes at 200c/392f.
  • Serve.

Notes

This is really good for Slimming World. It works out at 6 Syns for the olive oil and then a Healthy Extra B for the bread. When you are sharing this between 4 of you for a meal that is just ¼ HEB and 1.5 Syns each.
You could also use gluten free oats, Weetabix or coconut flakes, wholemeal bread just works well with this dish.
I also used a small handful of mint from a few stems from one of my mint plants.
