Just Like Nandos Peri Peri Chicken Drumlets Recipe

Super succulent and super crispy Nandos style Peri Peri chicken drumsticks. Perfect for sharing and served with yummy corn on the cob. Here is to date nights, parties and family foodie moments!

  • Chop up your corn on the cob into 3rds so that you have 6 equal small pieces. Place it into the steamer basket inside of your Instant Pot with 1 cup of water beneath. Set the lid to sealing and cook for 15 minutes on the steamer button.
  • Into your blender place the olive oil, paprika, garlic, bay leafs, parsley and the red chillis. Give them a whizz until it is grainy but not smooth.
  • Place your chicken drumsticks onto a clean chopping board. Sprinkle with salt and pepper. Then using a pastry brush, brush the blender marinade over the chicken drumsticks.
  • Place them in the Airfryer in the grill pan and cook for 12 minutes at 180c/356F.
  • Remove the corn on the cob from the Instant Pot (when it beeps) using quick pressure release. Place it onto the chopping board and season with salt, pepper and a sprinkling of Piri Piri seasoning.
  • Then cook for a further 3 minutes at 200c/392f on the other side, along with the corn on the cob. This will give them that barbecue well done look.
  • Add a small amount of butter to the corn on the cob and serve with the Peri Peri chicken drumlets.

Notes

Always use some good quality tongs to move the chicken from one side to another. It stops you getting burnt and it also stops the skin coming off if it is really soft.
Instead of using red chilli you can buy some of this piri piri powder and then place ½ a teaspoon of this into your blender instead. Plus these jars last for what feels like a lifetime therefore you can have a lot of Piri Piri chicken whenever you are in the mood.
I always partly cook my corn on the cob first in the Instant Pot. Otherwise they take forever to cook. Then while they are cooking you can be making the marinade and the chicken will be nearly cooked in the Airfryer and it will save you a lot of time.
This is a mild version that is family friendly. If you want more of a Peri Peri African/Portuguese spice kick then I suggest that you double the chilli.
We used 2 medium whole chickens and then chopped off the drums for this recipe, plus we had some spare drums in the fridge. So just go with a medium sized pack or chop them off one of your other chickens.
