Place all the ice cubes into the blender along with the sugar and blend until rough but not smooth.
Remove 2/3s from the blender and with the remaining mixture add the strawberries. Give it a quick blend so that they are well mixed and fill the bottoms of 4 glasses with the mixture.
Add another 1/3 of the sugar and ice back to the blender and squeeze the juice of a whole lemon into it, give a quick blender blast and pour over the strawberry layer.
Place the final 1/3 of the ice and sugar mixture back into the blender with the blueberries. Give it a whizz and pour over.
Place them in the freezer for 15 minutes to really go cold and then serve with a drizzle of lime juice.
Notes
Its optional whether or not you use food colouring to make the layers really bright. I didn’t because our blueberries and strawberries did the work for us.You could do this with any fruit. But the thing to remember is that its 1 teaspoon of sugar and 4 ice cubes for each layer you create.Another favourite of mine is using watermelon or pineapple.This drink traditionally comes with lime juice. Because of the lemon the drink tastes good enough without, but in the name of tradition I added a little on top.
