Place the cup of water in the bottom of the Instant Pot and place the prawns in the steamer basket on top of the steamer shelf. Steam for 2 minutes remembering to set the valve to sealing. Peel the prawns and dress with lemon juice and salt and pepper and then put to one side.
In a blender add the olive oil, 1/8th of the avocado flesh, rind from the lemons, white wine vinegar and the rest of the seasonings.
Pour the salad dressing into the bottom of a dish, throw the salad greens over it and then toss it in your hands so that the salad is well covered in the dressing.
Slice and place over it small chunks of avocado and cucumber.
Serve with the fresh prawns.
Always give your salad greens a good clean before using them, even if you have bought a salad bag. As they can carry a lot of dirt and small insects love to live in salad greens.
