Chop up your chicken into 2 breasts, 2 wings, 2 thighs and 2 drumsticks and put to one side.
Peel and grate your garlic cloves and your ginger. Peel and dice your onion.
In the crockpot add to it your onions, garlic, ginger, tomato puree and give it a good mix.
Thinly slice your tomatoes and add these too.
Add a can of tinned tomatoes and all the seasoning and mix well.
Place the chickens into the crockpot and place the lid on and cook for 8 hours on low.
After 8 hours remove the lid, remove the chicken with tongs and add the coconut milk to the sauce. Give it a good stir and this will give it the creamy body.
Serve in bowls with the tomato sauce and then the chicken pieces on top.

Another way to cook this (which works well) is to cook it in the Dutch Oven.
