Instructions

  • Chop the chicken into chicken nugget style chunks.
  • In a small bowl crack your egg and mix it until beaten with a fork.
  • Get out 3oz of the Tuscan granola and place it into a sandwich bag. Bash it with a rolling pin until it resembles a mix of fine and medium chunks.
  • Add to the granola bag the salt, pepper and the thyme.
  • Coat the chicken in the egg and then add it all the bag where the granola is.
  • Shake well until all the chicken is well coated.
  • Place the baking mat at the bottom of the Airfryer and then layer out your chicken chunks.
  • Cook at 180c for 20 minutes and then serve.

Notes

For a dipping sauce to go with it add 4 tablespoons of light coconut milk to a small dish. Squeeze in the juice from one lemon and ½ a small garlic clove that has been finely grated. Mix and serve with your breaded chicken.
 
Its important when making the dip that you use light coconut milk as otherwise it will be too thick for the sauce.
