Start by rubbing the fat into the flour until it resembles breadcrumbs. Add 2 out of the 3 lemons, the sugar, the vanilla essence and the eggs. Mix it well until it resembles a sticky dough.
Flour the bottom and the sides of a spring form pan and then place the dough into the pan. Press it down and make sure there are no gaps and so that everything is well covered.
Place a cup of water in the bottom of the Instant Pot, add the steaming shelf and place the spring form pan over the steaming shelf.
Cook on the steam function for 25 minutes.
Manually release pressure, remove from the Instant Pot and place on a cooling rack until it reaches room temperature.
In a mixing bowl add the rest of your lemon and 5 of your 6 tablespoons of icing sugar. Mix it well until you have a really thick icing. Put about 1/3 to one side in a different dish and then layer the top of your lemon slices with the remainder. Make sure there are no spaces and it is well covered. Place in the freezer for 5 minutes on a plate so that it can set and go harder quicker.
With the remaining icing add a little yellow colouring to give the icing a nice bright yellow colour. Mix it well.
Now take the lemon slices from the freezer and drizzle lines of yellow icing over the top.
Serve.
Notes
So I am sure you realise that the spring form is round and lemon slices are rectangular! Well what I did was take it out and chop it up into shapes and then it was an excuse to eat the side pieces.
