Instructions

  • Start by mixing your ingredients in a mixing bowl. This includes the flour, butter, sugar and vanilla essence. Follow the rubbing in method in order to rub the fat into the other ingredients.
  • Once it starts to turn into a dough, add the milk and eggs and mix well. If it is too thick add a little bit more milk.
  • Separate the mixture into four bowls with equal amounts in each. Add yellow dye to one, green to another, blue to a third and red to the final one. So that they are strong for each colour.
  • Flour your spring form pan so that the cake wont stick.
  • Add red at the outer corner.
  • Add a little yellow cake mix next to it.
  • Then add a little red to the yellow mixture to make it orange and then add this on top of the yellow.
  • To the next section add a green layer.
  • Then next along add the blue layer. Adding a little extra colouring to be able to get the dark and light blue combinations.
  • Finally add some red to your blue mixture for the final purple section.
  • Cover the top layer with some red cake mix and then get ready to place it into the Instant Pot.
  • Place 1 cup of water in the bottom of the Instant Pot, add the steam shelf and then place the spring form pan with your cake over the shelf.
  • Cook for 25 minutes on the steam setting. After 25 minutes manually release pressure and leave to rest for 10 minutes on a kitchen worktop.
  • Once it is cool then add your topping. Melt 50g of chocolate and using a spatula add a thin layer over the top of the cake.
  • Sprinkle with 100’s and 1000’s and serve.

Notes

We layered the top of our cake with 100’s and 1000’s as well as with melted chocolate. But you can change this depending on what you are into.
What is great about this recipe is that it uses equal amounts of flour, butter and sugar and this means if you want to adjust the recipe it is easier to alter the amounts.
Remember you can always play about with the colours:
Red & Yellow = Orange
Red & Green = Brown
Red & Blue = Purple
