Instructions

  • Clean and thinly dice your leeks so that they are very thinly sliced up.
  • In a small ceramic dish (that will fit nicely into the airfryer) add to it your leeks along with your garlic puree and mix well.
  • Cook in the airfryer for 10 minutes at 180c.
  • In a mixing bowl – add all your seasonings with the cheese and mince and mix well. Throw in your leeks and mix a little more.
  • Shape into kofta shaapes and place them onto sticks.
  • Cook in the airfryer for 15 minutes at 180c.
  • Serve with mayonnaise and ketchup.

Notes

Please make sure you clean and dice the leeks as small as you can. This will stop you ending up with big chunks of leek in your mouth when you bite into the kofas.
Instead of weighing your leek chop a slice so that it works out at approximately 3cms in length.
Break up the feta cheese in your hand and it will be like a crumbly mess and perfect for cooking with.
By dry frying the leeks with garlic will mean that the leeks will end up well cooked and that they will have a delicious garlic flavour to them.
