Peel and dice your onion and potatoes. Slice your peppers. Place them along with the sausages in the bottom of your slow cooker on a high heat setting. Add the garlic, ginger and coconut oil along with half of your seasonings.
Mix well and cook on high for 2 hours.
After 2 hours add the remainder of your seasonings, mix again and allow to cook for a further 30 minutes.
Serve it with fresh herbs.
Notes
In this recipe I have used my homemade healthy tomato ketchup but you could swap this for a sauce made with coconut milk instead.
